This was yesterday's dinner as tonight's dinner was a cheeky Nando's with the bf.
I'd had to travel for work and was shattered when I got home so I made this sort of hash thing. I had some frozen spicy sweet potato chunks from @asda
SlimZone range, they're just covered in spices, no oil or sugar or anything weird. So I cooked those and a couple of Quorn sausages off in the oven, and fried up some peppers, peas, spinach and mushrooms in a pan then added the sweet potatoes to crisp them up a bit more and chopped up the sausages and added those too. Then I topped it with a fried egg and some corriander, very random but actually really tasty! 🍠🍳
Chicken Nando’s style salad
2 Chicken Thighs
Halloumi Cheese 45g (Healthy A or 5.5 syns)
Medium Nando’s sauce 1/2 tablespoons (0.5-1syn
Salad as desired-
0.5-6.5 syns dependant
1. Preheat frying pan with fry light and cook (turn often)
2. Preheat grill and place Halloumi cheese under grill turn after 3/4 minutes
3. Cut salad as desired
4. Add Nando’s sauce to pan of chicken and heat
5. Plate as desired
Sweet potato nachos
1 sweet potato
2 chicken thighs (any chicken is fine)
Reduced fat cheese (40g Healthy A or 6syns)
1 small red chilli
7 small cherry tomatoes
2 tablespoons of sweetcorn
3 spring onion
Syn free or 6 syns
1. Cut a sweet potato into 1-2mm slices
Line on a baking tray and spray both sides with fry light (turn after 5 minutes, takes around 10)
2. Add Fry light to a frying pan on a medium pan and begin cooking chicken thighs (turn regularly) season to taste.
3. While cooking Grate 40g of cheese
4. Slice spring onions, tomatoes and chilli
5. Shred chicken and keep on low until Sweet potato nachos as done
6. Plate up as desired and sprinkle cheese and sweetcorn on top.

80g of oats (40g can be Healthy B option or 7syns)
1 banana (2 syns per serving)
blueberries 100g (1 syn per serving)
Banana and raspberry for topping
1. Mash on Banana
2. Whisk and mix in one egg
3. Mix in oats
4. Optional add the blueberries and mix well
5. Add some sprays of Frylight to a pan on a medium heat
6. Make 4 equal pancakes with mixture cook both sides well
7. Serve with optional fruit
Between 10-2 syns depending on preference.
Payday treat to myself for (almost) reaching the end of my first year at uni! (10 days to go... I mean that means I’ve basically finished right 😂) I’ve wanted a Fitbit since I started slimming world 14 weeks ago so decided today I shall get one. 😄
Took my younger brother to Thorpe Park today as a belated birthday present.... the food choices were.. KFC, pizza & pasta buffet, or kebab and chips. So 🤷🏻♀️🤷🏻♀️🤷🏻♀️🤷🏻♀️ at least I enjoyed it. :D #syns #syntime
Really cold today so fancied some proper comfort food. Made bangers and mash using @sainsburys
be good Cumberland sausages and OMG they’re delicious. They’re 50% less fat so only 1 syn each and actually taste like a normal banger, not dry and plasticky like diet ones do usually. I used 10g of gravy for 2 syns and 0.5 syns worth of @tescofood
reduced sugar mint sauce. My only syns so far today, so might treat myself to a gin later! 😏🙃
