Turn slow cooker on high and add 2 tablespoon of truffle olive oil (my secret ingredient)
900g free range beef short rib
200g green beans
3x Kara orange sweet potato
2x garlic cloves
5x stalks of parsley
1x handful of coriander
1x red onion
Salt, pepper, mixed herbs
2x tomato paste
1/2 punnet portabellini mushrooms
1x tbsp Beef gravy and 2x chicken stock cube.
# Brown meat well with some truffle oil in a pan on a high heat
# while meat is browning cut your onion, garlic, green beans and sweet potato, add to pot.
# add spices, fresh herbs and your meat.
# boil the kettle. mix gravy and stock together, add 2 cups of boiling water, mix and add to pot.
# put your lid on and allow to cook for 4 hours, stirring occasionally.
# after 4 hours add your tomato paste and whole mushrooms, add 1/2 cup water, turn setting to low on slow cooker and Allow to cook for a further 1 1/2 hours.
Enjoy your meal with a little rice but we prefer a fresh ciabatta with loads of butter 😋
