Throwback of bread.
85% Australia organic bread flour, 15% purple wheat flour (which is badly milled by domestic blender 😂). This organic flour has a higher protein percentage, compared to another from Turkey, which is no longer available in Malaysia. Better extensibility and elasticity give a better dough strength. I look forward to more open and even crumb using this flour! Btw I do like the smell of purple wheat, the smell is very similar to black glutinous rice.

When form and taste hit its mark!
Both fermentation and hydration was pushed to the limits on this country loaf. Crumb is incredibly tender, fluffy soft and flavorful.
92% total hydration with 85% sifted white flour and the balance a mixture of whole wheat and a splash of dark rye.
