We take it slow... like in the old times... 🐌👵 Because, actually, we need time to bake a REAL bread! Soaking, fermenting and waiting are the keys! Nowadays, most of the bakers use chemical yeast and other harmful substances to be able to bake hundreds of breads in couple of hours! That's insane!! We need to have time to cook proper food, same story with the bread! We need to have TIME to bake proper/digestible bread! 😀👍 We take it slow... because we chose to live a simpler life, respecting our timings and the timings of nature, to stop when it's needed (and not when someone needs to tell you have to stop), to live closer to Mother Earth and in harmony with her! 🙏🌿💓🌞
First go at batard in Lodge Combo Cooker, 10% whole grain Emmer and 80% hydration. No ear and probably slightly over proofed but still kind of nice. More attempts to come! 😅 100g freshly milled Emmer 900g bread flower 780g water 200g active levain 25g salt Levain: 1:6:6 (50% whole wheat) - 1:2:2 (100% bread flour) within 24 hours. Method: Mix flour, water, levain. ”Autolyse” for 60 min. Add salt. Rubaud mix 5 min, wait 15 min, mix 4 min, wait 5 min, mix 2 min. Transfer to tight rectangular container. Lamination after 30 min. Coil fold x2 separated by one hour. Bulk in total 4,5 hours. Divide, bench rest 20-30 min. Final shape, put in banneton. Rest in RT 30 min, put in fridge 3°C (5 hours 30 min from start). Retarded 10 hours. #Fiberurary Day 2 catchup! When I'm not knitting I'm... Well, sometimes... baking! As part of my modus operandi to "take photos and make things", of course I take photos of all the things I make. One of those things I make is rustic sourdough bread, from my home culture.  Taking a bite of warm, fluffy sourdough bread is like a tasty hug that grocery storebought bread just can't compare to, in my opinion. There's something nourishing and gentle about slow fermented bread, and each loaf that comes out of the oven is like Christmas Morning to me.  During the holiday season I make about 5 loaves on average per week, both to give away and to enjoy with our festive meals. My bread baking tapers off during other seasons, both due to the incredible heat that it creates, and also because I am more careful about my carbs during the rest of the year.  Rustic loaves like these are not only beautiful, but they are very worthy of trying, if you have never made sourdough. The ingredients are so simple, and once one great loaf is achieved, baking these is addictive! On an upcoming vlog I will be showing my process and hopefully a fresh loaf... A garlicy beetroot boules with cheddar! It took quite a few failed attempt before I could finally nail the colour! And now it is a hit with our customers 😀😀 **I grilled my beetroot with garlic and a dash of salt and mixed lemon juice (approx. 1 tbsp) to retain the colour. And then the challenge is to balance the sour taste in your bread. #focaccia The recipe is here @maurizio ✔️ This one was done like that: 💧 80% Sourdough 19% Farina tipo 1 Salt 2% Olive oil 2% 5h T24-27 C bulk 9h T20 C proof 20 min T230 C covered 10 min T 230 C uncovered ✔️ ✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️Эту фокаччу я делала так. 493 г итальянской муки 1 сорта 94г зрелой 100%ной закваски 344г холодной воды Т6 С + 50г 10г оливкового масла + 10г 9г соли ✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️✔️ Смешала до увлажнения муки закваску, 344г воды, всю муку. Автолиз 30 мин. Замес #slapandfold с постепенным добавлением оставшейся воды и соли. В конце масло. На брожении следила за Т теста (не ниже 24, не выше 27). Складывала #stretchandfold 2 раза через 15 мин и все остальное время через 30. Через 4 часа выложила в форму смазанную маслом и растянула по форме. Снова растянула через 30 мин, сбрызнув маслом. Вынула из духовки и оставила на ночь при 20 градусах. Разогрела камень, на него поставила форму и закрыла колпаком. Предварительно продавив до дна формы тесто пальцами непосредственно перед выпечкой. Сбрызнула оливковым маслом. Выпекала при 230 С 20 мин. Сняла колпак и допекала ещё 10 мин. Получилось нежно, вкусно. Но в следующий раз сокращу расстойку и увеличу брожение!
