Veggies. If they weren't corn or green beans, or maybe some raw veggies in a salad, I didn't have them growing up. #truth
So when I started eating a more balanced diet, I quickly learned I had to make some changes. And find different ways to eat them without gagging.
And crazy enough, the more I ate them, the more I actually craved them. Yup, just like the more sugar you eat, the more you crave that too! Crazy that it works for veggies too! 🤷🏼♀️ So tonight, I put this dish together - adapted from a frequent penne pasta dish we used to have. But instead of the pasta, I tossed in some cauliflower rice. And yeah, we added a little dressing in when we cooked up the chicken sausage and added it all together, for a little flavor.
No shame in adding a little "accessory" to help give those flavors some veggies, if you ask me!
So if you are a veggie-hater like I was, trust me when I say that it can change. It might take time, it might take the right recipe and tweaking some things, and it might take a little flavor to it to help you adjust, but I promise, you can find some out there that will fill you up and give you the nutrients you need!
