Chicken Chettinaad (adapted from NDTV)
Coconut- 1 tbsp
Dry red chilly - 2
Jeera - 1 tbsp
Coriander seeds - 2 tsp
Peppercorns - 2 tsp
Garlic - 5 or 6 cloves
Ginger - 1 inch cubed
Toast till coconut becomes fragrant and then grind in a mortar pestle or a grinder.
Heat oil in a pan.
Add rye (1tsp), Methi/fenugreek seeds (very lil) and 2 whole dry red chilly.
Once it splitters, add one large onion finely choppedand saute.
Add salt, turmeric powder and the ground coconut masala.
Saute till the mix leaves oil add tomatoes, water and chicken.
Cook till the curry leaves oil and you reach a consistency you like.
I wanted it more like a masala than a curry so I dried it out then smoked it with charcoal. And now I'm have to have some leftover to relish at leisure. 😍
