During her toddler years, she would drink at least 2-3 smoothies daily, it kept her immune system very healthy and kept her very regular, thank goodness because a sluggish digestive system is a breeding ground for illness. When Z Train began day care, I would mix it for her and the day care provider kept it refrigerated and gave it to her throughout the day.
Consuming healthy plant based smoothies and teas kept Z from catching all of those nasty cooties 😷 that many children catch in school.
When it comes to feeding the babies healthy foods, especially picky eaters, be consistent, have fun with it, include them in the preparation, the healthy shopping and picking food at farms, farmer’s markets etc., all of these healthy practices will eventually become a regular healthy lifestyle for them. Dark chocolate almond butter bites! 😍🍫✨ similar to the peanut butter balls I posted a few months back, but I modified a few ingredients and now it’s paleo with the almond butter as a substitute 👌🏼 the perfect little treat that’s full of healthy fats, protein, and a slight bit of sweetness 😋🥰 these are super easy to make and can be stored in the freezer for a couple of weeks once made. Here’s what I did: .
1️⃣ Combine 1/2 cup creamy almond butter, 2 TBSP melted coconut oil, 1 TBSP maple syrup (or 2 if you prefer it sweeter), 6-7 TBSP coconut flour, 2 scoops collagen peptides, and 1 tsp vanilla extract in a bowl. Mix well into a dough.
2️⃣ Form dough into small balls and place them on parchment paper on a plate. Put the plate into the freezer for 10 mins to let them firm up.
3️⃣ While the bites are firming in the freezer, melt 1 bar chopped dark chocolate with 1 TBSP coconut oil in a small saucepan until liquefied. I prefer DARK chocolate, so I like @montezumaschocs
100% dark choc or one of the darker @eatingevolved
bars; I also like these brands because there are no yucky ingredients hidden in there (i.e. soy, artificial flavors, etc.) but this part is up to you depending on your preference!
4️⃣ Take the bites out of the freezer and dip each one into the chocolate. Once dipped, place the bites back onto the parchment paper and place back into the freezer for about 20 mins to allow the chocolate to firm up. Store in an airtight container in the freezer for a couple weeks and enjoy! 😍

Fresh homemade oatmeal bread made with my own ground up oats to make flour. You can always purchase oatmeal flour.
2 3/4 cups oatmeal ground
1/2 cup maple syrup or honey
1/4 teaspoon gar gum
3/4 cup homemade cashew nut milk
Two eggs room temperature
1/2 teaspoon of salt and baking powder
1/4 teaspoon baking soda
1 tablespoon apple cider vinegar
stir it all up you can always add more milk if it’s not like a banana bread consistency.
spray parchment paper with oil and pour it into a loaf pan. Bake on a 300 oven for one and a half hours. Using a meat thermometer make sure the bread internally is at 200.

Just taking this moment in being present & grateful for what I have now in my life. A lot has changed within just these few months but still trying to figure out me. Right now I’ve been focusing on trying to find the balance of life. Having fun while making memories with friends and also remembering my health goals along with my health struggles. 🥰My little nugget sometimes blows me away with her choices. She has been asking for spinach 🌱since yesterday... I didn’t have any. So we went to our little garden in the backyard and got beet greens, that apparently are just as delicious to her as spinach. I never rammed “healthy” food or choices down her throat. My hope that seeing us trying to eat healthy (with a healthy dose of treats) teaches her moderation and what is good for her little body. I loved having a garden in the summer and I couldn’t be more proud that she appreciates all that she can do with it herself. It’s never too early to teach what is healthy to your kiddos, all you can do is arm them with power of knowledge and hope that they make wise choices.
