Bolognese with Zoodles
Hello everyone! Ok, I have to admit, I'm not a very big fan of zucchini... I only have it in my house when I ask someone to buy me some cucumbers but they come home with zucchini 😂. Anyways, I decided to make them into zoodle since bolognese really masks the taste of zucchini (also a great way to make stubborn people to eat more veggies!). Hope you all have a nice Thursday!
Ingredients: 1 large zucchini, 100g pasta sauce, 1 ripe tomato (diced), 1 sausage (or tofu, I used @vegiedelights
herb and garlic sausage) (mashed with a fork), 1/2 medium onion (fine diced), 30g canned lentils, 1/4C water (or more depending on how thick you want the bolognese to be), olive oil for pan, cheese (optional)
Method: Reserve 1/4 of zucchini and create zucchini noodles eitg the rest (I used a julienne peeler but use a spiraliser if you have one, it'll be much much easier). Add onion to pan and saute until soft. Add sausage, break into small pieces and cook until browned. Add tomato, pasta sauce, water and lentils simmer until done. Cook zoodles by sauting in a pan. Put zoodles and bolognese together and enjoy!
