Cabrales is one of the oldest cheeses and may well predate Roquefort. It is made in the stunning mountain range of Picos de Europa in the Provence of Asturia in a small, remote village, inaccessible by road. It is traditionally made and ripened in caves for thousands of years, using a combination of cows, goats and ewes milk- the blend, depending on what was available at the time.

Had a sentimental dinner last night at Taberna Los Ángeles, where I ate my first meal ever in Madrid on my first night ever in Europe last May. I introduced my family to some of my favorite tapas like boquerones en vinagre (sardines in vinegar), this incredible blue goat cheese spread, huevos rotos with jamón shaved from the leg of ham sitting on the counter right next to us, and Basque-style sidra (cider) which my mother didn't hate somehow. 🤷♀️ I'll be traveling around Spain with my fam for the next two weeks so I'll try to post pics of the foodie escapades in my future! 😋
