12 seasoned uncooked (I used these) or preformed Meatballs
1/2 cup Onion, chopped
1/2 cup Red Pepper, chopped
1 Garlic clove minced
Spanish Olives, pre-sliced, 5.75
Organic Mushrooms, 4 oz
Bush Chili Beans, mild, 16 oz
Del Monte Tomatoes with Chilies, 15 oz
1 tsp. Cumin
1 tsp. Chili Powder
1/2 tsp. Paprika
Salt and Pepper
2 tbsp. Cilantro, chopped
1 Bay Leaf ***************** Instructions:
Cook meatballs in oil until lightly browned in batches. Finish meatballs off in oven by baking for addtl 15 minutes until done.
In the meanwhile add more oil to the pot on stovetop. Then add the onions and peppers and cook until just tender. Next, add the garlic; cook an additional couple minutes. Then proceed to add all of the other ingredients including their juices to the pot.
Stir in the spices: cumin, chili powder, paprika, salt and pepper (to taste). Add the cooked meatballs to the chili sauce along with the cilantro and bay leaf. Be sure to use a wooden spoon to smash up half a dozen of the meatballs or add in addition to the 12 meatballs, seasoned and cooked ground beef, if that method is preferred.
Cook on medium heat for 15 minutes to allow flavors to blend. Add a cornstarch slurry (1 tsp cornstarch to 2 tbsp water) only if needed to add thickness to the chili sauce. ENJOY!
