Mini Cherry Cheesecakes 🍒 🍰

3 - 8 Oz pkgs. of Cream Cheese
1 cup sugar
1 tsp Vanilla Extract
Sour Cream Frosting
1/2 cup sour cream
2-3 Tblsp. sugar more if desired
1/2 tsp Vanilla
Fruit for Topping (cherries blueberries, strawberries) .
Preheat oven to 300 degrees F
Cream together sugar and cream cheese until light and fluffy. Add eggs one at a time. Mix well until most of the lumps are removed.
Line a mini cupcake pan and fill each well 2/3rds full. Bake in the oven for 25 minutes (or until done). Cheesecakes will sink when done. Remove and let cool for at least 8 hours.
Sour cream frosting: mix together sugar, sour cream and vanilla. Place a dollop of frosting on each cheesecake. Then add a cherry (or other fruit topping).
Keep refrigerated until ready to serve.

🍃🍵🍃 When I want something simple, clean and nourishing this is one of my go to dishes. This green soup is great any time of year - it’s immune boosting during cold season but also perfect in the spring and summer when there’s so much green produce available. Put ANYTHING green in it: spinach, kale, Swiss chard, asparagus, zucchini, leeks, broccoli, peas, fresh herbs.... 🍃🍵🍃 Eat Your Greens Soup: Sauté 1/2 large onion or 1 medium onion, chopped, in 1 Tbs olive oil. Add a few ribs chopped celery and a couple cloves of minced garlic. Sauté a few minutes and add 4 c chicken stock, vegetable stock or water. Chop all remaining veggies in to 1/2” pieces, roughly chopping any leafy greens. Add everything to the pot and bring to a simmer. Cook at least 10 minutes and up to 30 minutes until all vegetables are tender. Season with salt and pepper and a squeeze of lemon juice. At this point you can puré it or leave it brothy. Serve alone or with a spoonful of pesto like I did here 😋

Who doesn’t feel better when they prepare themselves some yummy wholesome foods for the week? It took me years to get into the groove of forming this habit - but let me tell you. It’s welllll been worth it.
I struggled with eating bad for years and one day I will share my story, so I can relate that adapting to new healthy eating habits is definitely hard. Especially with having limited time and not knowing what to eat/cook, and prepare yourself for the week ahead. We all get busy, but when you have access to foods, that will nourish your body - you feel wayyy more energized and better about yourself AND you save money!👌🏼 #winwin
I usually try and cook twice a week (if all goes well)
We got 👉🏼 whole grain rice // potato patties // green onions (for omelettes and salads) // a garlic chicken dish mixed with garlic, green beans & mushrooms that I made in the slow cooker - which btw, smells BOMB!!! // celery for a snack (ill also juice some) // baked broccoli & cauliflower // roasted zucchini, cherry tomatoes & mushrooms // some diced sweet potato // roasted seasoned carrots // some apples that I’ll chop up - add some nut butter (def one of fave snacks) // cucumber that I’ll slice and snack on and or add to salads etc // bananas, bananas, bananas - mainly I have frozen to add to smoothies 😋 // avocadooooo (one of my faves) // lemon for the mornings & dressings // oranges // and diced pineapple.
Honestly.... meal prep doesn’t have to be complicated. This is just some of the foods I’ll be incorporating in the week. When you eat good, you feel good. Simple. You don’t have to eat less - you just need to eat right. The right foods that work for you. We are all built differently - one food/diet may work for one but not the other. Experiment and see what works for your body type.
