Whipped up a batch of these Vegan Sunflower Butter & Oat Chocolate Chip Cookie Granola Bars the other morning and my girls were over the moon! These are easily some of their favorite treats! These bars are now jokingly referred to as “Grinch Bars” 🎄 (as names by my friend) because the chlorophyll in the Sunflower butter reacts with baking soda/powder when it bakes turning these beauties green naturally! 💚 My girls love these and with a nut free option these are perfect to pack in school lunches! I tweaked this recipe a bit from my original one, here’s how to make these! 🍽 -3/4cup GF Rolled Oats (@bobsredmill
) -1/2 cup Almond or Oat Flour (@bobsredmill
-2 TBS Honey or Agave (@madhavasweet
) -1 cup Sunflower Butter (@wild_friends
) -1 tsp Madagascar Vanilla (@simplyorganicfoods
) -1 tsp Baking Soda -1 Flax Egg -2 TBS Pea Protein (@bobsredmill
) -Chocolate Chips (@enjoylifefoods
Combine everything and press mixture into a lined baking dish. Bake for 12-15 minutes until the bars turn golden, remove and allow to cool before cutting. Store in an airtight container. Even though I technically could have counted my chocolate birthday cake as a brownie because I used Lakanto brownie mix, I pretty much neglected the fact that it was national brownie day on my birthday. That’s why I’m compensating today by taste-testing this vegan @thekarmabaker

that’s also organic and gluten free! I mean, a brownie is a brownie, so I wouldn’t consider this a directly “healthy for the body” food, but it is healthy because it feeds the soul. 🥰🍫
Yeah yeah this photo is kinda trashy given that the brownie isn’t plated nicely nor topped with superfoods or vegan ice cream, but let’s be real, it’s finals week and I can’t be bothered to spend more money on food when I leave for LA TOMORROW OH SNAP and I need more time to study. 😪😅📅📚📝 But anyhow, no photo can truly do the quality of this brownie justice. It’s decadent, dense, sweet, crispy on the outside, soft internally, and is actually quite satiating in terms of palatability. You really don’t need another one after this brownie because it already has all the flavor and textural aspects you’ve been craving, unlike some random store-bought brownies made from brownie mix or in the frozen aisle where you can just eat three or four of them and still ask what’s for dinner. 🤤👀🍽 I wish that it was sold more widely because I absolutely love it! Fortunately I live close to Lassens in SLO and I believe they have a bakery somewhere in LA, so I’ll be sure to try their peanut butter brownie and walnut brownie sometime! 🥜🥄💖

Many of us think of salads as diet food 🙋🏼♀️ For years after my recovery I didn’t eat salads because I was trying my best to avoid diet culture, and frankly I found them to be boring.
Well, as they say “hindsight is 20/20” because I am now a salad lover! They are packed with good for you nutrients, and can be thrown together in a jiffy! And, shocker, they can be delicious if you are not trying to make them super low calorie like many media sources often tell us too ( I mean how many of you have seen a list of salad toppings to avoid somewhere online 🤦♀️) So, here are some ideas of things to throw on your salad to make them less boring, and more satisfying!
1. Healthy fats: olives, avocado, low sodium dressings, nuts and seeds
2. Carbs: potatoes, sweet potatoes, pumpkin, winter squash, brown rice
3. Protein: Tofu, beans, veggie burgers, quinoa, humanely sourced fish and eggs
I always like to add something acidic, crunchy, or sweet to my salad too. Swipe right to see an example!
