One of my FAVOURITE summer meals. Vietnamese spring rolls - yes please!!! We've been making these for years - not sure where the recipe originated, but my younger sister passed it on to me. I've tweaked the original and replaced some of the original ingredients for healthier versions but the overall feel is the same and super yum! You can make these with tofu which I prefer or wild caught shrimp. You can actually skip all of these and just chow down on the veggie goodness. Y.U.M.#mygreenfork
