Tex Mex Sloppy Joes. This family-favorite dinner gets a Tex Mex makeover! In a large nonstick skillet, heat 1 teaspoon vegetable oil over medium-high heat. Add ½ cup chopped onion and 1 tablespoon minced garlic; sauté until onions are soft, about 2-3 minutes. Stir in 2 pounds ground beef, 1 teaspoon ground cumin, 1 teaspoon chili powder, ½ teaspoon salt and ¼ teaspoon chipotle powder, breaking up the beef with side of a spoon. Cook, stirring occasionally, until beef is no longer pink (5-7 minutes). Stir in 1 (15.25-ounce) can corn, 1 (15-ounce) can tomato sauce and 1 (4-ounce) can diced green chilies; simmer until the mixture thickens slightly, about 6-8 minutes. For each sandwich, spoon ½ cup Sloppy Joe mixture on the bottom half of a bun; cover with the top half of the bun and serve. Save $1.50/lb. on Fresh 90% Lean Ground Beef this week.

Slow Cooker Pork Carnitas Tacos. This tender, flavorful shredded pork slow-cooks all day until it's practically falling apart. Start with a 6-8 pound boneless pork shoulder roast. Trim any excess fat, then place in your slow cooker along with the following: 2 tablespoons coarse salt, 1 tablespoon ground cumin, 1 tablespoon freshly ground black pepper, 1 tablespoon oregano, 2 teaspoons ground cinnamon, ½ teaspoon cayenne pepper, 8 smashed whole cloves of garlic, 4 chipotle peppers (canned or dried), 1 (14- or 15-ounce) can diced tomatoes and 2-3 cups liquid, such as orange juice, beer or stock. Cook on low for 8 hours. Let the pork cool enough to handle, then remove from slow cooker and place in a large bowl. Shred the meat with two forks (or by hand). You'll end up with about 10 cups of meat. Skim the fat from the leftover juices in the slow cooker and save the liquid for reheating your meat later, if desired, to help keep it moist. To make tacos, serve in tortillas with your favorite toppings. Get creative! We recommend sour cream, cilantro, radishes, pineapple, avocado, chopped red onion and lime wedges.
