Strawberry Cake Donuts with a Strawberry Glaze
Makes 6, 3 ½ inch Donuts
1 ½ tablespoons strawberry puree (about 4 small strawberries)
¼ cup hot water
1 ½ cups powdered sugar
2 cups flour
¼ cup + 1 tablespoon sugar
2 ¼ tsp baking powder
½ tsp kosher salt
¼ cup dried strawberries, crushed
¼ cup + 1 tablespoon buttermilk
3 tablespoons butter, melted
1 egg + 1 egg yolk
In a food processor pulse the strawberries and hot water until pureed. Transfer to a small bowl. Whisk in powdered sugar until glaze is smooth. Set aside.
In a medium bowl combine all dry ingredients. Form a well in the middle of the dry ingredients and add wet ingredients. Using a spatula, gradually incorporate wet ingredients into the dry ingredients until the dough comes together. Turn out dough onto a lightly floured surface and roll out to ¼ inch. Cut out 6 donuts and roll the scraps into balls.
Fill a large heavy bottomed pan with 4 cups of vegetable oil, making sure the oil comes 3 inches up the side. Heat oil over medium heat to 350 degrees. Once
the oil is to at 350 degrees, gently place 2-3 donuts into the pan. Cook donuts for 1 minute before flipping and frying for an additional 1 minute. Remove with a slotted spoon, making sure to remove any excess oil. Place on a cooling rack. Allow donuts to cool for a couple minutes before dipping in glaze. Enjoy!
