So during this week I've had quite a few incidents where my day didn't go as planned. For starters my mom and I were on our way to someone when my car had a problem for basically the fifth time this month and we had to cancel our plans.
I also had a few recipes that were failures which meant that I had wasted time, money and electricity.
Another thing that may seem ridiculous is that the foundation I use was discontinued and I had to purchase about 3 other options (once again wasting money) just to find something that
1) doesn't make me look like a ghost and
2) isn't seriously expensive #studentbudget
(This is a sensitive thing for me since I struggle with acne and therefore use foundation to cover it)
Along with this I also realised that I'd grown apart from my high school friends since starting university and that they didn't really care.
The moral of this story is that throughout this week I had to remind myself to be flexible and that sometimes it isn't worth it to bend over backwards (note the photo😉) for someone if they aren't appreciating it.
There is always things in life that are unplanned and that can ruin your day but the way that you react is the real test. But this also means that if you can prevent unsavoury moments (like people who disappoint you) you should remove them from your life. Friendships aren't worth sacrificing your health.

Почти навсякъде в Европа градовете има много добре изградена инфраструктура за колела. Колело може да ти е основно средство за придвижване в Швеция, Дания, Финландия, Германия, Чехия, Австрия и много други европейски страни. Местните правителства осигуряват на своите граждани много добри условия за придвижване с този вид транспорт с цел да намалят автомобилния трафик в градовете.
И така, купувайки си едно колело втора ръка за €50-60, можеш да спестиш адски много пари за градски транспорт, в същото време, ако се придвижваш на големи разстояния, можеш и да не даваш пари за фитнес 😅.
Аз се придвижвах с колело както докато бях в Холандия, така и докато бях в Швеция и честно казано, много ми харесва. Няма нищо по-освежаващо сутрин от велосипедна разходка до университета - със сигурност се разсънваш, пристигаш на лекции освежен и тонизиран. Как се кара колело в студено време? Ами много лесно, трябва да облечеш всяка една част от тялото - ръкавици, шал, шапка и си готов 😊.
Ако все пак не ти се кара колело, то в повечето държави и студентската карта за транспорт не е толкова скъпа - €75 за ❗️семестър (не месец) във Виена и само ❗️€10 в Прага (по-евтино и от София 😀).

Candied salmon and kale salad!
Put 1/2 can of salmon in a pan with half a clove of garlic, a little onion, and a little ginger. Add crushed chilies to your spice level. Pour in 1 tbsp of: olive oil, soy sauce, apple cider vinegar. Maple syrup to taste (I put 2 1/2 tbsp but it’s not an every day thing, it’s a treat). You can add in 1 tsp of paprika if you have any. Throw in a small handful of walnut. Cook over low until sauce is mostly absorbed and onions are soft.
Actual salad part- just kale, onion, pepper, one dried fig ( or cranberries work too), a slice of avocado if you have it, and some sesame seeds!
That’s it, you’re done!
Pro tips from a novice: sweet onion is nicer than red onion in this but I didn’t have any, chèvre is really nice in this, looks a lot less like cat food if you make this by baking walnut crusted fillets! But the other half can of salmon means salmon for breakfast!

HEY GUYS!!! So I have finally created an IG directly related to become financially free! The first thing I decided to do was total my debt (as you see in my bio) that debt includes a personal loan, one credit card, my car (Baby Dee), and student loans 🙄. I had you at discounts right? Yup, you can get student discounts at clothing stores, restaurants, even movie theaters. I did a little research—so you wouldn’t have to—on places that offer student discounts. Princess Polly, Kate Spade and Top Shop all offer 10% off your favorite clothing items. Apple also offers discounts to save you from buying a Dell. In fact, I saved $200 on my MacBook Air. To those who constantly have to listen to music, the Apple Music and Spotify student discounts are well worth the money, offering half off ($5 a month) to students. When on the run and need a quick bite; Subway, McDonalds and Burger King all offer 10% to students when you show a valid student ID. It might not be the most nutrient heavy, but it definitely won’t break the bank. HOW TO BUDGET AS A VEGAN🌱
so after the grocery haul I did a few weeks ago, a few people asked how I budget as a vegan and reduce my shopping costs so I thought I would share some tips that may seem obvious but sometimes we just forget the simple things! 💰
1. reduced sections are ur bestie: always look for reduced stickers on things, they may not be very much reduced but it all adds up!
2. stock up when pantry items are on offer: i eat a lot of cereal bars but I wait until they’re on offer and then buy loads as they don’t go off. Also more expensive items like superfoods are sometimes like half price in Holland and Barrett so watch out
3. buy loose fruit and veg: not only does this reduce plastic waste but buying loose can often be cheaper. Also frozen fruit is cheaper than fresh fruit!
4. make a list: if you go in knowing what you need you’re likely just to get those things and not buy unnecessary items
5. go for supermarket own brand: own brand items are a lot cheaper and to be honest most of the time it’s exactly the same
6. check ur labels: on price labels it says how much things cost per 100g for example so you can compare items weight for weight
7. stick to whole foods: vegetables, potatoes, grains, beans are the cheapest things in the supermarket!
8. TREAT YOSELF: it’s okay to treat yourself and buy more expensive things once in a while, it’s all about balance and a jar of almond butter is necessary for sanity 😊

Zucchini noodles with roasted vegetables
Roasted garlic, onion, sugar beet, sunchoke (think of it as the lovechild of a potato and a radish but sweeter), and eggplant in sesame oil with salt and pepper for 30 m at 400 F
I used a mandolin to make zucchini noods, they can be crazy expensive but I got mine for $10 at Walmart. Chopped some kale and red pepper, threw them in a pan again with s & p, and a tiny bit of oil. Low heat for 7 m. I add a tiny bit of water if it starts to get dry.
Combine, stir, eat voila!
On a better groceries week I would have used olive oil, basil, a bit of chicken, and maybe even a bit of crumbled feta

Bulk cooking saves you £££ 💰
Unrelated caption but still relevant cus food 🤤 - so this week I made a lasagna for me + my housemate, we both have busy schedules at the min and having something precooked that we chuck in the microwave 3 nights a week is great & student budget friendly 👛
Meat sauce: 750g lean beef mince, lasagne sheets, 1 bell pepper, 1 onion, 500g passata, 200ml beef stock 🥩
Optional - nutmeg etc for seasoning 🧂
White sauce: 500ml whole milk, 50g flour, 50g butter 🥛
200g of cheese to top 🧀
Method 👇🏼 ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Cook the mince until brown (10 mins) 🔥
2. Pour over 500g of passata and 200ml of beef stock (dissolve stock cube in 200ml boiling water) 🍅
3. Add chopped bell pepper & onion
4. Add nutmeg and any other seasoning e.g. salt and pepper, thyme, chives etc 🧂
5. Bring to the boil and simmer for 30 mins 🔥
6. Prepare the white sauce by meeting 50g of butter in a saucepan and adding 50g of plain flour. Gradually mix in the milk, stirring continuously until the sauce is smooth. Cook for a further 7 minutes or until thickened 🥄
7. Spoon one third of the meat sauce into the lasagna dish, cover with lasagna sheets and cover with one third of the white sauce. Repeat this three times 🔄
8. Sprinkle with grated cheese & cook in the oven at 180 degrees for around an hour and a half! 🧀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
6 servings, cost per servings is roughly 95p (@aldiuk
