Finally got done with meal prep today, there’s so much food I don’t know how I’m going to eat it all. Just kidding my appetite is ridiculous lately it’ll last mid week. 🤤 stuffed peppers, roasted veggies, carrots and red pepper hummus, salmon, quinoa, hard boiled eggs, fruit, old bay tilapia and sweet dill cucumber salad.
snagged these beauties at a fruit stand on our way home from a little staycation in SLC - huge raspberries this time of year?!?! They were scrumptious! I also got some sweet corn, a few peaches that weren’t quite ripe, and some PERFECT tomatoes I sliced and gobbled up. 🍓🌽🍑🍅
it’s this part of summer I don’t like to end- all the lovely fresh tomatoes, cucumbers, corn, and all the peaches and pears! 😋🤤 driving home I said to my husband, “remember when i used to make stuff?” 😂 I used to bottle tons of peaches and pears and make jam to last us the entire year. then there was a fourth baby 18 months after the third and life got crazy for a while. But I am SO ready to get settled in our new place and get cooking again! Routine is calling! 💛

Everything tastes better grilled. Agree or disagree? 😛 I love to take untraditional foods and kiss them with a bit of heat and smoke (avocado & watermelon!) but I also happen to like those foods in their un-grilled state as well 🙃 not better, just different!
Different is fun and exciting and one of the main reasons I choose meals and recipes I’ve never made before at the beginning of each week. I’m forever searching for a different & unique way to make my meals shine. We’ve all got to eat, why not make it fun (that’s my philosophy at least!) 😊

Nourish bowl: Swiss chard, pickled julienned carrots, cabbage & daikon, julienned zucchini, balsamic mushrooms, broccolini, organic chicken, vermicelli rice noodles, pickled ginger, fresh mint & basil. .

As much as the importance of fellowship and building relationships/friendships has been on my heart recently, so has forgiveness. I haven't talked much about my eating disorder partly because I like having a place to just share meals &my faith, but honestly, some days there's just too many words, and others I struggle to find any at all. One thing's for sure though; in the midst of what was a 5 month deep battle with anorexia, I lost some of the friends closest to me. Not only did I avoid going out or to BBQs in fear of eating food that someone else prepared, but I was a hangry monster, consumed by logging food almost any time I was around them. Even though most days are a mental struggle for me, I am so thankful for the family and friends that brought my destructive habits out of darkness and into the light. Im learning how important it is to forgive myself for letting "the desire to get back in shape" go too far. My mom reminded me yesterday that God's already forgiven me; therefore I'm free to forgive myself. More so, I'm learning to ask for forgiveness. Last night i got to have a bbq and swim with friends that I was sure wanted nothing to do with me after last year. I haven't logged food in over a month, I wasnt anxious about eating, and I got to spend time laughing & embracing the start of my senior year of college with some of my favorite people. "Recovery" is a word I hate because it makes me feel so weak. But it's real. And it may be a long road, but I'm thankful for nights like those that remind me of the little ways that things are and will continue to get better. ••••
