🇮🇹 Basil Chicken Kebabs and Zucchini Couscous:
A healthy summer-y meal on a beautiful crisp night here in San Jose... It definitely feels like fall is around the corner.
For the Basil Zucchini Couscous I grilled the zucchini first to give them a smokey flavor. The Israeli/pearl couscous gets lightly sautéed in olive oil first, then cooked in chicken stock. Sautée 1 shallot and 1 garlic clove and add to the couscous. Zest one whole lemon and add it to the mix (not the lemon juice). The zucchini goes in toward the end when the couscous is almost done with a small amount of fresh Parmesan to add some moisture. A dash of sea salt and lots of fresh basil make this an awesome summer treat. 🌿
The 🇮🇹 chicken kebab recipe from my previous post was tasty, but I marinated it way too long for a lemon marinade... if you make this either omit the lemon or only marinate for a couple of hours. Lemon juice toughens up the meat too much. Also, I would scale the salt back from 1 to 1/2 tablespoon. .

1 1/2 cups peaches, frozen
2 cups bananas, frozen
2 tablespoons almond butter
2 to 4 tablespoons plant-based milk (for blending)
Pick ONE flavor option:
2 tablespoons fresh basil
2 tablespoons fresh mint
1 teaspoon cinnamon
Add all ingredients to a food processor then process until smooth. It takes a few minutes to magically transform the ingredients into a creamy texture. Eat immediately and feel peachy!! 🍑 #nicecream #feelingpeachy #kaleandchocolate

BBQ CHICKEN SWEET POTATO NACHOS
•Thinly Sliced sweet potatoes baked @ 425 brushed with olive oil, salt and pepper until crispy on both sides
•In the mean time have pressure cooked or grilled chicken. Lightly shred and add some bbq sauce •chop up some tomato, onion, spinach, and this time I added fresh jalapeños YUM •Once the sweet chips are done put them on pan like you would nachos then add chicken onions and tomatoes and jalapeños
•Add some mozzarella cheese and bake until cheese is nice and melted
•Remove from the oven and drizzle with bbq sauce and then add spinach

First dinner back at school!!!! Turns out, I forgot silverware, and the only thing I had was a plastic fork, so it limited my options for dinner! I literally ripped up the red pepper like an animal, but hey, it worked! Tasted so good, and is a great start for the year! .
