brown rice gluten free fusilli, cucumbers, tomatoes, black olives, red onion, and low fat feta cheese and made a light sauce of olive oil, balsamic vinegar, lemon juice, dill, oregano, and salt and pepper. We will probably eat this as a side for the rest of the weekend and I am not complaining! •

C H I C K P (L) E A Z - Def been on a salad kick this summer and I ain’t mad about it. This is so freakin easy to make. It literally took me like 10 mins, and I felt like a domestic goddess. 10/10 recommend finding a farmers market and getting some fresh tomatoes to throw in here. Bring the leftovers to work for lunch the next day and everyone will be extra jealous. Here’s the deets to this fresh goodness. ↓
Throw the following in a bowl: 1 drained can of chick peas, 1 chopped red bell pepper, 1/2 chopped yellow onion, 2 green onions (like the ones that literally look like weeds; ps only chop up and throw in the green part not the white stem!), 10 fresh basil leaves, 1/2 cup cilantro, 2 big ole tomatoes, 1 teaspoon of balsamic vinegar, 1 tablespoon of sesame oil (olive oil works, too!), add salt and pepper to taste.
That’s literally it. See told you it was fast and easy. 💁🏼♀️

I used it to make this incredibly yummy watermelon feta salad - stupidly simple. Just pile some arugula on the plate, add watermelon slices, and sprinkle feta and slivered almonds on top. Dress with balsamic - make you own with EVOO, balsamic vinegar, honey, Dijon, salt, pepper, and garlic powder. 😁🍉🥗

I don’t know about you but I crave all the vegetables. I like to eat a variety of foods, but vegetables are probably the food group I eat the most often. I always always always incorporate them into my meals. One super easy way to get some colorful veggies (technically fruits too) is this super easy salad. •
Cucumbers + tomatoes + onion is my go to summer salad. It’s so good and so refreshing!! This time I added some carrots in as well. You could also add green peppers, broccoli, whatever floats your boat 🚣♀️ . The key is the dressing. It’s super simple but a definite crowe pleaser. Mix two parts olive oil and one part red wine vinegar (2tbsp of olive oil and 1tbsp of red wine vinegar, most likely will need to double if making enough for 2+ people) add a few thinly sliced pieces of garlic and salt. Make it ahead of time and let it sit in the fridge for about an hour so the garlic can marinate. Then mix it with the veggies and throw in some fresh parsley or basil if you’re feeling fancy 😉. The best part of this salad is that it might just taste better the next day!!
Taste the rainbow 🌈 If you have been following along, then you know I LOVE a good salad! There honestly is nothing more satisfying than having all of your favourite foods in one bowl. Gone are the days of simple mixed greens and dressing on the side!
If you are smart with how you make/ order your salad, you can have your cake and eat it too.
TIPS FOR A GREAT SALAD:
Start with a base of different greens and lettuce. Go for spicy arugula and mix it with kale and crunchy romaine.
Go wild with your toppings. Add different flavours and textures to keep your mouth and your stomachs satisfied. Try mixing a variety of roasted vegetables, some raw and some fermented.
Add fresh herbs for flavour!! Always add in some crunch. Try different seeds, roasted chickpeas, nuts, hemp hearts, dry roasted edamame beans, kale chips, etc.
Do not forget about the fats! Add in some avocado or olives to keep it satisfying.
Top with a lean protein to keep you full! Try salmon, tofu or chicken!
Make your own dressing!!! Lemon juice and olive oil some garlic and salt and pepper.
Essentials: greens, fibre, fats and protein!
WARNING ⚠️— I said be smart about your ordering. That means leave out the creamy dressings, the cheese, the dried fruit, the croutons and the tortilla chips! You do not need all that crap to satisfy your taste buds!
