new triple cream yogurt is seriously competing with ice cream for my love at the moment. I just pop the whole thing in the freezer as is, and when I’m craving something cold and sweet I pull it out, take off the lid, let it sit on the counter for 10 mins, then add my favorite toppings (how you doin chocolate chips & cacao nibs 😏) and BAM! Homemade frozen yogurt that truly takes zero effort on my part. And who doesn’t love that?!
You can also obviously just eat it at regular fridge temp like pudding. Sometimes I’ll eat half as yogurt then put the other half in the freezer for later. I’m pretty wild, I know. (Ps, the lemon & raspberry flavors are TO DIE FOR as well. With some chocolate chips... drooling just thinking about it 🤤). If you’re one of those boring vanilla people (you will forever be an anomaly to me) that flavor is probably good too but again, chocolate = bae so don’t try to fight me on this.

Ok, so I decided to take some of the heavy whipping cream I made today and make myself some keto friendly ice cream! GAME CHANGER it’s so good! 1 cup heavy whipping cream, 1 tsp vanilla, 2 tsp sugar replacement(NOT artificial) I used Swerve, Monkfruit would also be a great choice, and I added 1/2 cup fresh picked raspberries curtesy of my dad. Add to a pint sized mason jar and shake for 3-5 minutes then your jar will be full and you can pop it in the freezer! As you can see my jar is not full because I ate my first serving for dessert! I couldn’t very well give you the recipe if it wasn’t delicious 🤤!
No Bake Almond Fudge Protein Bars
1 cup oat flour (or regular oats ground up in a blender)
1/2 cup quick oats
1/3 cup whey vanilla protein powder
1/2 cup crispy rice cereal
1/2 cup almond butter (or peanut butter)
1/3 cup honey
1 tsp. vanilla extract
2-3 Tbsp. chocolate chips for melting
1. Prepare a 9x5 loaf pan by spraying it with cooking spray. Set aside.
2. If making your own oat flour, place rolled oats into a blender or food process and process until they turn into a fine powder.
3. In a medium-sized mixing bowl, combine oat flour, quick oats, protein powder, and crispy rice cereal. Mix until well combined and set aside.
4. In a small pan over medium heat, add almond butter and honey, stirring until the almond butter is melted and fully combined with the honey. Stir in vanilla extract.
5. Remove from heat and pour into the dry mixture. Stir until everything is fully combined.
6. Pour into a brownie pan. Using a spatula or your hands, spread the mixture evenly in the pan, pressing down firmly.
7. Place chocolate into a microwave safe bowl and nuke on high in 20 second intervals, mixing between each. When chocolate is fully melted, drizzle over the top of the packed mix using a spoon.

Summertime popsicles are the best!! The kids loved helping me make them almost as much as they liked eating them! I like blending whatever organic fruit is on sale with Greek yogurt and a little bit of whatever juice I have left over (this batch was beet). A much healthier option than store bought pops!
It’s National Ice Cream Day and I, for one, plan to celebrate with an entire pint of cold creamy goodness! (🤫 don’t tell my kids)
