My first soft boiled eggs! They were so yummy!
I’ve been really contemplating cutting meat out of my life, or at least for a majority of what I eat. So I’ve got some beans and greens here, an organic sweet potato and quinoa veggie burger(I try to stay away from those types of things, but once in awhile they are so yummy) an apple and fresh eggs, topped with sriracha for some spice in my life!
There is at least 20grams of protein in the meal without meat👍

stuffed peppers for lunch before i head out of town tomorrow! recently i’ve been looking into making more plant based meals to help reduce our carbon footprint. this was still a filling meal and lots of protein! •
lunch 👉🏼 i made the quinoa beforehand on the stove top, and then mixed with pinto beans and fire roasted tomatoes. put the filling in half of a pepper and baked at 400 for about 20 minutes 👌🏼 topped with salsa and pumpkin seeds 😊

A typical day of eating for me. Sometimes I don't get it all in. Sometimes I have to eat a few more servings of veggies, or an extra protein, because I'm about the eat the house down. But I can tell when those are passing moments due to either not sleeping well, or I felt extra good during my workout and worked harder than normal. But in general, this is pretty indicative of my food intake. .
I am SO very thankful that I have a few supplemental nutrition choices to get needed nutrients in, without having to cook/chop/prepare additional food, and have even more chew time (much as I love to actually eat). I'm thankful that they have a purpose too, not just "fill you up". ,
My 'ration balancer for people" helps make sure I'm not missing out on nutritino, as well as any supplement can. One helps me kick-start my day, which is helping kick-start my workout. And one helps me make sure I have good nutrients to start repairing muscles I break down in my workouts. .
The rest of the choices? All mine. Mixed and combined into whatever sounds good at the time, from foods that are prepped beforehand. I don't do much "meal planning". I mostly do "food planning". So while I had 2 meals today of grilled pork, it was combined with different foods. And while I have baby spinach for 2 meals, it too was combined with different foods. .
Never a dull meal! .

Here’s one for the people. So, The Beyond Meat Burger has been getting a lot of hype lately. I decided to take a look at the ingredients and honestly guys; not impressed. They’re loaded with saturated fat, sodium, and it’s extremely processed. *
With that said, we have a black bean veggie burger here that’s totally yummy. I adapted this recipe from @myrecipes
Homemade Quick Black Bean Burger (link in first comment). *
I added 1 cup of spinach + 1/2 cup onions + a cup of shredded carrots to the mixture. Because this added a lot more moisture, I also used about a cup of @bobsredmill
quick oats + a half cup extra bread crumbs. Oh, and I threw 1/2 cup shredded cheddar to the mixture because #everythingsbettawithchedda
After processing in a food processor, add the oats and mix with a spoon. Allow this mixture to solidify in the fridge for an hour or so. It makes 5 to 6 burgers. *
This bad boy has zero fake ingredients, less saturated fat, less sodium, way more fiber and nutrients. Highly recommend topping with a @mcclurespickles

“I want everyone to just think of the first couple of things that come to their mind when I ask the question “what do you love?”. If I asked you to keep going with that, and name all of the things that you love, how long would it take you to name yourself? 3 years ago if you asked me this question I don’t think I would have even considered putting myself on that list. I was struggling with an eating disorder and very unhappy with myself. At the end of my yoga class last night, the teacher said come back to the question of ‘why do you come here?’ My initial thought was for exercise but by the end of practice and after really thinking about the question I realized that wasn’t the answer at all. When I was struggling with my eating disorder I was running everyday. And after thinking about the difference between who I was then and who I am now, I realized running wasn’t something I did for me. I wasn’t running because I loved myself I was running because I hated myself. Something I did for everyone else so that they would see me the way I wanted to be seen. 3 years later I am recovered and much healthier both mentally and physically. This is something that I truly attribute to Ophelia’s Place. Helping others to see the positive things in themselves has helped me to see them in myself. The community and positivity that this organization has put into my life is something I will be forever grateful for. The reason I go to yoga is because it gives me strength on and off my mat. The movement gives my energy and grounding. I shared all of this with you to encourage you to find the thing that gives you strength and puts yourself at the top of that list of things that you love.”
