Coconut ProJYM Bars
1 scoop TVB ProJYM
1/4c plus 1 TBS coconut flakes (natural unsweetened)
2TBS Coconut Flour
1 Tsp Stevia (I used the powder form)
4TBSP Fairlife 2% milk
30 grams dark chocolate
Mix all the bar ingredients together in a medium bowl until you get a dough that you can shape. If the dough is too sticky you can add a bit more coconut flour.
Divide the dough into 3 balls and shape into rectangles.
Melt the dark chocolate. I melted mine in the microwave in a small glass bowl heating no more than 5-10 seconds at a time. Stir between heating.
Coat the bars with the chocolate. I found the easiest way to do this was to ice it like a cake. Place it on parchment paper and put them in the fridge for a couple hours to harden. I was in a hurry and put mine in the freezer for about 20 minutes.
Store in a Tupperware container in the fridge. *I got this recipe from the book Protein POW by Anna Sward. I changed the recipe from the original slightly to be able to use ProJYM.
