Lemon Curd, Meringue & Blueberry cakes 🧁 Heaven for just 1.5syns each 👍
Cakes - makes 6
40g self raising flour (6.5syns)
1tsp baking powder (1/2syn)
2 tablespoons of a good make sweetener (1syn)
2 large eggs separated
2 tbsp water
Sift together the flour, baking powder and sweetener.
Mix in the yolks, water and food flavouring.
In a separate bowl, use an electirc whisk on the egg whites until stiff.
Fold both mixture together and put in a fry lighted silicone cupcake mould. Cook on a preheated oven on 140 for 30mins. Let cool before cutting or filling.
Whisk 2 x eggs with 1 whole lemon juice, 1 whole lemon zest and 3 spoons of sweetener, put into a bowl over a pan of hot boiling water, whisk until thickens, add 2 tablespoons of quark and let cool.
I added a small bit of crumbed meringue to finish off ☺️
