Low-calorie cooking spray
2 red onions, finely chopped
3 garlic cloves, crushed
15g fresh sage leaves
500g large potatoes, peeled and diced
1.5 litres hot vegetable stock
250g baby spinach, plus extra to serve.
1/ Spray a large, non-stick saucepan with low-calorie cooking spray and place over a medium-low heat. Add the onions and cook for 2-3 minutes. Stir in the garlic, sage and 4 tbsp water and cook for 2-3 minutes, or until the water has evaporated.
2/ Add the potato and stock. Bring to the boil, cover and simmer for 15 minutes, or until the potatoes are tender. Stir in the spinach and cook for 5 minutes, or until wilted. Purée with a stick blender, or whizz in batches in a food processor, and season to taste.
3/ Serve topped with extra spinach leaves and a little freshly ground black pepper.
