So, I just realized that 6/7 of my last posts have been sweet and I’m 100% on board with this. Also, I hope you are too, bc I have so many sweet recipes heading your way next week! Although, oddly enough, I don’t have much of a sweet tooth anymore ... weird. 🤷🏻♀️
Ok, now back to these skillets. I made a few minor adjustments to my gingerbread pancake mix and ended up with more bread than pancake! I really should make these a few more times before claiming this was intentional...but either way they are completely delicious! So I promise, recipe coming soon!

Tapas Time! For my second night in Berlin, I decided to try out some Tapas at a Spanish restaurant called Mar Y Sol. I went with the Potato Balls Stuffed with Meat (Mexican Style), Braised Rabbit in Lemon-White Wine Sauce, Chick Peas and Carrots in an Almond Sauce, their Deep Fried Dates Wrapped in Bacon with Almond, and one Croquette with Spinach and one with Chicken. The Potato Balls had a distinct spicy heat to it, which I enjoyed. I think that was the “Mexican Style”. The Braised Rabbit was very tender, and the sauce that it was in paired nicely with the meat. The Chick Pea dish had almonds in it, which I enjoyed as it added a nice crunch to the dish, however I wish there was more of the almond flavor in the sauce. My favorite dish was the Deep Fried Dates, as there where actual almonds inside the dates, which I was not expecting. The filling in both of the Croquettes had a nice creamy texture, even the chicken one which surprised me a bit. Overall, a great taps experience in Berlin!

If you like Indian food at restaurants and ever thought this is amazing and I want to make this at home, then this recipe is your answer. Also it is much healthier than the restaurant version, so all the more reason to make it this weekend. I added some boiled eggs but you can use any protein of your choice. 2 small onions chopped
2 medium tomatoes chopped
3-4 garlic cloves crushed
2 tbsp tomato paste
2 tbsp cooking oil (I used avocado)
1/3 cup cashews soaked in water for about 4 hours- overnight
1/2 cup coconut milk
1 tsp cayenne powder
1 tsp sugar
1 tsp cumin powder
1-2 Garam masala
1-2 cayenne powder (adjust according to how spicy you like it)
————————————————————————Add oil to a medium pan and when hot, add onions and let them cook for a couple of minutes
Add garlic and let them cook till onions are soft
Add tomatoes to this and cook for a few minutes till tomatoes are cooked well
Blend the cooked onions and tomatoes with a little water
Blend the cashews separately with some water
Pour the onion and tomatoes along with cashews into the pan you used earlier to cook them
Add coconut milk, tomato paste, stir and cook for a few minutes
Add all the spices, stir(now is the right time to add any cooked protein) and let it cook for another minute
I served it up with a boiled egg, brown rice and roasted broccoli

I seriously have never wanted to high five myself more than right this second!! I just wish I could be sharing this moment with someone besides my 2 year old screaming “ew no like it!” without even trying it 🙄. So my tomato plant randomly started producing 10 times more tomatoes than it did over the summer so of course I thought fried green tomatoes! I I used a great recipe from @tasteofthesouthmagazine
for the tomatoes and topped with my favorite @pimentocheese

Well that’s me! I just signed, sealed and delivered my last photo shoot for 2018. And wow what a year it’s been.
🧡 I’ve had some incredible clients, along with lots of opportunities to push my creativity right out there. I’m grateful for every single one!
🧡 I travelled to Europe with my eldest boy and we had the adventure of a lifetime. I overcame my fear of flying and travelling virtually alone, and can’t wait to do it again!
🧡 I started my food styling and photography workshops and pushed through lots of fears around public speaking, and had a fantastic time doing so.
🧡 I turned 40! 😱😱
🧡 And I enjoyed this current season of my life, right here right now, with a few more highs than lows which is quite nice. My Mum is in remission 🙏🏼, my brother is doing well 🙏🏼, and I’m holding onto all the peace and grace this particular season is bringing.
I don’t like to make New Years resolutions, but I do like to have goals. And I’ve written some for 2019 in my diary, and will quietly beaver away at achieving them. Or maybe not so quietly - who knows 🤷🏻♀️😆. In the meantime, it’s time for a refresh, a reboot and a reset. I’m ready for summer holidays! Just whenever the weather is...
