Kicking off this gloomy Wednesday with another bowl of savory steel cut oats! Are you a sweet or savory breakfast person? I’m a savory gal all the way - I feel a lot more satisfied throughout the morning after a savory breakfast. I’ve been feeling a little bored with my usual breakfast go-tos, so this has been a fun change. Fueled up and ready to go for a long workday ✌🏻
What I did:
Cook steel cut oats according to package instructions or reheat if they’re already made. Season with a splash of low sodium soy sauce (or coconut aminos), garlic powder and black pepper. Add in a couple handfuls of spinach and mix together with the oats until the spinach wilts. Top with 1 fried egg, 1/4 avocado, red pepper flakes and more black pepper. **I prep a batch of steel cut oats in advance because they take a little longer to cook than rolled oats - then just reheat in the morning with a little extra liquid.

It's been years since I've been to a @sergiosrestaurant 🙈 & when I went yesterday for a quick lunch I found myself pleasantly surprised w/ this Miami staple! 😊 Their menu now includes entrees for vegetarians 🥑, those trying to be healthy 💪, & even some innovative fusion dishes 👌! Came to try the Croqueta (oh man, surprisingly one of the tastiest on my quest for the best) & even found myself drooling over their empanada options...carne y maduros?! 👀 Favorite by far was the Picadillo Flatbread ❤️ AKA flatbread, picadillo, black bean hummus, & an over-easy egg 🍳! Sergio's totally surprised me! 😁⠀⠀⠀⠀⠀⠀⠀⠀⠀

there’s just something about a big bowl of yogurt that I love...maybe because it’s almost ice cream ?🤗 plain Greek yogurt topped with grain-free granola and cacao nibs🤤
This morning I was “that person” eating breakfast on the street while walking to my doctor. Are you someone that eats on the go? If so, don’t succumb to shitty fast food and instead prep these for your commute! A healthier and much tastier version of a “McMuffin”. To make: slice sweet potatoes into rings and bake at 425 for ~25 minutes. Whisk egg whites (or eggs!) and pour them into a muffin tray, filling halfway, then bake until cooked through (~12 min). While those are both cooking, sauté the @bilinski sausage patties on a hot skillet. Once everything is done, stack it up and make a kick ass breakfast sandwich to get you through your day.

After spending all afternoon fishing with my Mum, tonight’s dinner was leftovers and when we have leftovers I always bake a batch of my HERB POTATOES 🥔 These beauties are soft and fluffy on the inside and crispy on the outside. I usually buy organic potatoes but every now and then I’ll buy a kilo of the small white potatoes that don’t need any peeling. Keeping the peel on adds so more flavour and texture.
