Mirapa kodi vepudu. No frills simple red chilly chicken fry. It's yumm and I can't wait to share it with some special folks today. Recipe : 1 Chicken - cut into medium pieces
Garlic paste - 1 tbsp
Lemon juice - 1 tbsp
Chilli powder - 2 tbsp
Garam masala powder - 2 tsp
Jeera powder - 1 tsp
Dhaniya powder - 1 tsp
Turmeric powder - 1 tsp
Salt to taste
Mix all the above except oil and marinate for at least 5 hrs or overnight.
Heat oil in a non-stick pan. Add a pinch of mustard seeds, let them splutter and add a pinch of jeera. Now add in marinated chicken and mix well on high flame for 5 mins. Close the lid and cook the chicken for 15 mins on medium flame. Open the lid and sauté on high flame for 5 mins or till you get the desired consistency. Add fresh curry leaves and serve hot with rice or chapati.
Tip : I use my mom's masala chilli powder instead of regular one. This is basically a nice mixture of Guntur chillies, dried garlic, coriander seeds and methi seeds thoroughly pounded.
