Super easy lemony broccoli pasta recipe!
Okay. Pre heat your oven to 180 degrees.
Cut off the zest of half a lemon and chop into small bits.
Place the lemon half onto a baking tray.
Cut however much tenderstem broccoli you want, add to the baking try and pour over a little olive oil, salt and pepper and rub in.
Cook for 15 mins.
Meanwhile boil the spaghetti.
Crush a clove if garlic and pan fry with the lemon zest.
Add in a thinly sliced piece of Serrano ham (or not if you’re veggie). Fry til garlic is golden brown and the ham is crispy.
Drain the pasta and put it back in the pan. Add a little extra virgin olive oil, a small spoonful of pesto and a generous grating of parmesan. Also add all the other ingredients and squeeze the roasted lemon juice in. YUH MEE.
Asian meatball bowl!
I am into bowl food...I always love tucking into any kind of bowl! In fact, I always eat out of a bowl... but bowls have been all the trend this past year and for some reason, I still can’t get enough! Don’t know what to make? Choose a protein, make a bowl!! I tend to cook mostly by impulse and start thinking in one direction and ending up in the complete opposite! I wanted to do Mexican but this time, I had some @woolworths Asian Slaw in the fridge (it’s becoming an addiction now), edamame and some meatball mince, so I figured I’d try something Asian this time since it was screaming at me 😆
All I did was pan fry some spicy beef meat balls (use any meatball mixture, I had some of my own in the freezer and used that) giving them some good colour!
I then made a teriyaki style sauce with the following, all to taste * soya sauce * Honey * Fresh lime juice * A squeeze of sriracha * Sesame oil
* Rice vinegar * Grated ginger * Fresh garlic
* A splash of water
I heated this sauce in a pan, added in some sesame seeds, and then stirred in 1/2 tsp of cornflour mixed with water and allowed to thicken a little before adding to the meatballs making sure they were evenly coated
* the Asian slaw filled half the bowl along with extra corn, edamame beans and toasted peanuts
* Steamed tender stem broccoli
* Meatballs topped with spring onions and more sesame seeds * Fresh lime
Would you try this? I found this combo so unusual with the meatballs but a really nice change up to the usual!
I'm not actually a comfort eater, I usually have more of an appetite when I'm happy. But today, Kingsley dished me up a humongous bowl of comfort and I not only needed it, I devoured every single mouthful and scraped the plate clean
I know it's only Tuesday, but this week has been pretty shitty for a few different reasons, but mainly because one of our bunny rabbits, of nine and a half years, died late on Sunday night
