December is almost here - can you believe it? And with it comes the annual overindulgence... be it in the form of gingerbread, stollen, cookies, mulled wine or just heavy meals. Inspired by my recent travels to Stockholm - where I had kannelbullar-style date balls - I made these gingerbread bliss balls. This way you can enjoy all the lovely flavours & sweetness but in a much healthier form. Ingredients: 1 handful of almonds (toasted in a pan until fragrant), 2 handfuls tigernuts (soaked overnight, rinsed and drained), 5-7 soft dates (roughly chopped), 1 heaping tsp hemp butter (or any nut butter), 1 tsp gingerbread spice, 1/2 tsp cinnamon, pinch of salt --> blitz until just wet/oily enough to shape little balls. If too dry, add more nut butter, if too wet add some ground nuts or chia. Decorate with something tart e.g. dried pomegranate arils or barberries. I highly encourage you to use your hands for measuring - you don't always need exact recipes and scales. Especially when making bliss balls go with your intuition. I use a combo of soaked + toasted nuts for optimum consistency AND flavour. Swapping the tigernuts for cashews will give you a creamier result, but I just love the tigernut flavour. One more thing: I am not saying you shouldn't indulge during the festive season! I will definitely enjoy some less healthy foods at Christmas markets, on my birthday (which is also coming up soon) and over the holidays with my family. Embarking on our annual trip up to Maine to be with family and eat lots of yummy food. You could say this is my spirit holiday (@kenworthystudio that could be a thing?) because it includes all my favorite seasonal flavors and veggies, in my favorite place (Maine) with my favorite people (family). I used to struggle bringing my “inventions” (as they would call my vegan/gf dishes) not wanting to be weird and definitely not wanting to miss out on something more delicious!! but through the years (through fierce competition with siblings) it has led to improve the T-day game which eventually led to last years pop up Friendsgiving at @morriceflorist where we all (@jocelynfilley @farmfieldseamv @notyoursugarmamas ) threw one heck of a plant based feast! NEW BEGINNINGS.⠀ ⠀ In the past 12 years I’ve lived in 6 different countries, on 5 different continents. I’ve had over 50 roommates (yep! I can’t believe it either!), and have started 2 businesses. ⠀ ⠀ But what’s even crazier - I think - is the fact that I moved to all of these new places on my own. It’s kinda funny actually, thinking about it, I’ve mastered the art of uprooting myself...⠀ ⠀ If you had asked me a year ago if I would ever go back to Germany, my answer would have been NO WAY! ⠀ ⠀ Well, never say never, they say - and in this case I’ve managed to completely shock myself...⠀ ⠀ I don’t know what happened to be honest, but for some reason, over the past 6 months, I’ve been feeling a need to settle. To stop living out of my suitcase, to always have a next trip planned...⠀ ⠀ ...and while I actually have a ticket to Australia for December 8th, and plans to spend the winter in the sun - it seems that l was never supposed to get on that plane.⠀ ⠀ It’s a long story, my friend, but the real reason I’m telling you all this is because I’m about to start a new chapter. A new beginning.⠀ ⠀ I’m moving to Berlin. ⠀ ⠀ On Saturday. ⠀ ⠀ And for the very first time, I feel nervous about a move.⠀ ⠀ I’ve been thinking about changing the direction of my Instagram account for a while actually, and this idea of taking you on this journey with me came to my mind. Taking a stab at recreating the açaí bowl from @cafegratitude with the last bit of granola that I had from our trip to LA for @remode . Blend 1 packet of @damn azon açaí with 1/4 cup almond milk, 1/4 cup blueberries, 1/2 banana (or 1/4 banana and cauliflower), 1 scoop @vitalproteins collagen and a packet of @yoursuperfoods “forever beautiful mix” which is a mix of chia seeds, açaí, maqui, acerola, and blueberry powder. (What can I say @instagram ads got the best of me 🤷🏻‍♀️ but so far I like their powders.) Topped it off with coconut yogurt, almond butter, mulberries, toasted coconut, brazil nuts, hemp seeds and pomegranate.
I haven’t even started cooking yet, but I already know dinner is gonna be freaking delicious! 🤤👅💦

PUMPKIN CHEESECAKE ICE CREAM WITH SALTY CINNAMON SWIRL // Moving to the desert is the perfect excuse to turn one of my favorite fall flavors (pumpkin spice) into a cold treat (ice cream)! It may not look like much, but this mess of a bowl is made entirely of veggies, nuts, and fruit (with a little collagen boost)!! Here’s what you’ll need: 1 bottle Pumpkin Spice @zupanoma (see sub in comments) 1 cup raw cashews 2-4 pitted dates 2 tsp cinnamon, divided 1 tsp ginger ¼ tsp cloves ½ tsp maple extract ¼ tsp salt 3 tbsp almond butter Optional: 1 tbsp pure maple syrup // 1. The day before making, put the bowl of your ice cream maker in the freezer. Place the cashews in a glass jar with the dates and cover water to submerge. Soak overnight, then drain the water. 2. Using a high-powered blender, combine the cashews, dates, 1 tsp cinnamon, ginger, cloves, maple extract, and @zupanoma. Blend until smooth. 3. Transfer to a bowl in the fridge to cool. 4. When mixture is cold, process in your ice cream maker. 5. While ice cream is freezing, combine the remaining 1 tsp cinnamon with the salt and almond butter in a small bowl. Add the maple syrup, if using. Add by the spoonful to the ice cream maker while it is still on, just before ice cream is finished, so that it will swirl in but not completely combine. 6. For a firmer ice cream, transfer to an airtight container in the freezer. // I topped this bowl off with an additional drizzle of almond butter and some granola, and next time I’ll probably double the swirl because that’s always my favorite part! (As in, my ice cream containers used to look like a scene from Holes because I was always chasing the good stuff! Switched things up and made a tasty, simple and satisfying #meatlessmonday meal 😍 On my plate: @cybelesfreetoeat superfood red lentil pasta and sautéed veggies. . For the pasta: I brought water to a boil then added half the box of noodles, boiling until tender. Drained the water then added @chosenfoods avocado oil, pink salt and drizzled with @365bywholefoods tahini. . For the sautéed veggies: chopped some @calorganicfarms organic cabbage & purple carrots, red pepper and leek. Cooked them on medium-low heat in a frying pan with coconut oil & pink salt.

Who wants an easy one pot dinner recipe? Odds are you have most of the ingredients already for this Lemony Chicken + Garbanzo Soup! I drew inspiration from Greek lemon orzo soup. So yum. 😋 . . . To make: - in a large pot or dutch oven, heat 1 tbsp of olive oil. - add diced onion, celery, carrot and minced garlic. Cook for 5 minutes. - add 1 lb of whole boneless chicken thighs and brown each side (5 minutes per side). Baked Acorn Squash with Maple Syrup is a simple side dish that is perfect for holiday meals. 🦃 Cutting these squash open can be a little tricky because the raw flesh is tough. Use a sharp knife and place the squash on a dish towel so it won’t roll around. Cut from stem to tip on one side and then flip it over and do the same on the opposite side, this time cutting all the way through. Then you just scoop out the guts and you are ready to rock and roll. You can save the seeds and roast them just like you would pumpkin seeds. This recipe calls for the addition of walnuts for the last few minutes of baking. And, add some pumpkin seeds and fresh thyme right before serving. Who is ready for some soft and chewy Gingerbread Cookies?? . . Even though December is not here yet, I’m too excited to share these with you all. They are my favorite cookies and since I’ve been seeing gingerbread spices everywhere, it’s time to make these cookies again! They are gluten free and comes from the recipe I’ve been using for many years to bake soft and chewy cookies. . . Growing up, I always love eating gingerbread cookies. However, I only like soft and chewy cookies. When it comes to building those cute gingerbread houses, I will help build mine (because who doesn’t like to build their own houses and decorate them with actual candies?!), but I will only eat the cream or candies after because the cookies were often too crunchy. Now, that was the 8 year old me who did not know how to bake at that time. Once I learned to bake, you bet I was baking soft and chewy cookies all the time! Simple Turmeric Hummus with Tortilla Chips. A really easy and very tasty little snack. 👀 Ingredients 1 tin of drained chickpeas 2 tbsp Tahini 2 large garlic cloves, grated 100ml Olive Oil 1 tbsp Tumeric 1 tbsp oregano 1 tsp maple syrup 2 Tortilla Wraps 2 tbsp olive oil 1 tbsp smoked paprika Salt and Pepper to taste Method In a blender, add the drained chickpeas, olive oil, garlic, Tumeric, oregano, maple syrup and salt and pepper. Blend until smooth. Turn on your oven to 170 degrees and get a baking tray ready. Slice the Tortillas into Triangles and brush with olive oil, paprika and salt and pepper. Bake for 5 minutes. Healthy food can be comforting too 🌿😌 Cooked up this warm and hearty dish this AM to enjoy while I prepared for tonight’s Friendsgiving. It has chicken broth, lentils, butternut squash, yellow onion, and kale all simmered on the stove for about an hour or so. DARK CHOCOLATE PUMPKIN CUPS 🍫🎃⁣⁣ ⁣⁣ Okay guys I think this is ~officially~ my last pumpkin recipe of the season. It’s gluten free, refined sugar free, vegan (depending on the chocolate you use) and NUT FREE. 🙌⁣⁣ ⁣⁣ 👉🏼 1 1/2 chocolate bar (I used @lindtexcellence 90% to keep it low in sugar)⁣⁣ 👉🏼 2-3 tbsp. pure pumpkin (NOT pumpkin pie filling)⁣⁣ 👉🏼 1 tbsp. @sunbutter sunflower seed butter⁣ (nut butter would work too)⁣ 👉🏼 1 tsp. @simplyorganicfoods vanilla⁣⁣ 👉🏼 1 tsp. @365bywholefoods pumpkin pie spice⁣⁣ 👉🏼 1 tsp. coconut oil⁣⁣ 👉🏼 Pinch of sea or pink salt⁣ ⁣⁣ Line a mini muffin tray with liners. Melt the chocolate and coconut oil. Add 1 tsp. chocolate to each liner and place in the freezer. While that sets, mix together pumpkin, sun butter, vanilla and pumpkin pie spice. Add 1 tsp. of the pumpkin mixture to the chocolate and then cover with chocolate. Sprinkle some sea salt on top then place back in the freezer to set again. Keep in the freezer because these usually melt fast. Enjoy! 💚

With our state on fire and with what feels like constant tragedies all over the world, sharing lighthearted food posts and pretty styled photos can feel so insignificant. So, in addition to sharing recipes with each other this week, in the comments please share any resources and organizations you know of that help bring food to everyones tables. Or perhaps organizations that are offering up free masks for those in areas affected by the fire,  basic hygiene supplies to those in need, animal shelters for displaced animals from the fires - you name it. Chocolate pecan butter pie smoothie bowl by @papaya_sunshine 🍫 Recipe:⠀ Ingredients:⠀ 1 cup of homemade pecan milk (Any nut milk will work to )⠀ 1/4 cup oats ⠀ 2 tbs pecan butter ( or almond butter ) ⠀ 1/2 frozen banana ⠀ 4 - 5 medjool dates ⠀ 1 tsp maca powder ⠀ 1/4 tsp Cinnamon ⠀ 2 tbs cacao powder⠀ Cup of ice.⠀ Blend until thick and creamy. “Please follow the instructions on the back of the pack” they say, I never do and end up with a mush. 🙄 I had half packets of leftovers so I decided to make a mix of vegan ramen and udon noodles. I forgot to read the instructions that I had to separate the udon noodles before boiling them. 🙈 I managed to get some of the separated while boiling and not just ensuing up with a whole pile of mush noodles. 😂 Hope everyone has had a great start to the short holiday week. Happy Monday. 🤗 • Chilli oil and maple butter noodles stir-fry 🗯 1 tbsp chilli flakes 1tbsp sesame oil 1 bowl of green bell pepper, sliced onions, scallions, king oyster mushrooms, coleslaw mix. 1 pack of @nonalimfoods ramen noodles 1 pack vegan udon noodles 1-2tsps coconut aminos 1tsp @traderjoes Maple butter Heat a wok, make sure it’s super hot and add in the sesame oil. To this add in the chilli flakes and immediately add in the all veggies. Let this cook on a high flame for a couple of minutes. Boil the noodles as per instructions. Add in the cooked noodles to the wok, add in 1-2 taps of coconut aminos, pinch of salt, 1tsp maple butter and 1tsp umebashi vegan seasoning.
