Tasty Thursday!! (On Friday!) Thai Fennel Salad
1 large bulb of fennel, chopped
2 endives, chopped (I used pink/white endive...so pretty!)
2 cans of chickpeas
1 orange, sliced and cut into small pieces
Mixed Up Pepper
1-2 tablespoons coconut aminos
Saute the chickpeas in olive oil and Mixed Up Pepper on medium heat until crispy. Toss the fennel and endive in olive oil and Mixed Up Pepper and bake for about 5-10 mins. until softened and roasted. (Or, you can also saute the endives and fennel until softened...just do in a different pan than the chickpeas since the timing is different.)
Add the fennel, endive and chickpeas to a serving bowl. Add the oranges and toss with the coconut aminos.
Serve hot or cold.
Last week I made a delicious chili that I ended up calling, Fancy Chili. It had rosemary, chickpeas, fennel and other veggies. While putting it together, I had cooked the chickpeas and the fennel and decided together, they would make a great side dish. Today, while preparing the dish, I was planning to just mix in some lemon juice and olive oil but decided to make it have a Thai flare since I was planning to also share the recipe for the Thai Veggie Soup I made this week. Might as well stick to a theme.
I love using fennel in dishes. It has many health benefits, one of the best being for digestive health. I love the taste and the texture as well. If not cooking it, it adds a great crunch to a salad.
Endive also has tremendous health benefits but is often forgotten about. It is excellent for heart health, digestive health and for mental clarity. (Who can’t use some of that!) Enjoy eating this salad alone or serve with your favorite protein. For dinner tonight, I added sauteed tofu to my salad with an extra splash of coconut aminos and it was yummy.
For meal planning purposes: If you want this to last for leftovers, double the recipe!

Helloooo loves!! It’s FRIDAYY and I have the day off so that means I am gonna celebrate by dressing up cute, putting on makeup, and yes even hoop earrings, and going out to lunch with my fav before she leaves me for France for 4 months 😭💗 I still managed to pick this pizza as my lunch, guilt free, because it was delicious and everything I wanted at that moment and it was even gluten free 🤷🏻♀️ When you get the chance to eat good food and spend time with your friends take it and never look back! Hoy fue la temperatura récord de calor acá en Conce, 29°C y como no quise quedarme quieta, aproveché de ensayar esta torta saludable de manjar de dátiles, nueces y plátano.
La presentación final será diferente, en este caso hice reemplazo del ingrediente original que tengo pensado por yogurt griego endulzado con panela.
La torta en sí, es libre de lácteos, trigo, lactosa, azúcar refinada y materia grasa (y no, no es de aire para quienes se lo estén imaginando jaja). Está endulzada con Tagatosa de @naturalist_endulzante
y panela para darle una nota acaramelada.
Vamos a ver qué tal la reacción de los comensales aquí en la casa jeje.
So today was hot... Like, really really hot (at least for me 29°C/84°F are not pleasant in any way) and because I didn't wanted to be a potato couch during the afternoon, I decided to make a healthy cake.
This is a date caramel, walnut and banana cake. Refined sugar free, oil free and gluten free. And no, it's not made of air if you're wondering haha. Just simple ingredients and much much love for healthy baking.
For decorating purposes I decided to use Greek yogurt and some dried fruits.

butttttttt you definitely need to cook it for longer than the instructions say cuz my chickens were not fully cooked at the end 🤦🏻♀️ but the sauce was bomb! so grateful that there’s an Indian spice store next to work, can’t wait to cook more Indian dishes!!!
