This breakfast porridge is a staple in our house. I make a weekly grain on Sunday and put it in the porridge during the week. This nourishing bowl comes together in minutes. Diced plums were added to the porridge and then topped with plum jam and roasted sunflowers seeds. The second photo is the porridge with diced pears topped with pear applesauce. What combinations can you think of?
Warm Breakfast Chia Porridge
1 cup unsweetened cashew milk (or milk of choice)
1/8-teaspoon ground cardamom
1/4-teaspoon ground cinnamon
½ cup cooked quinoa, barley or brown rice
2 tablespoons chia seeds
1-tablespoon maple syrup
1/2 –cup fruit
Toasted slivered almonds (optional)
Place cashew milk in a small saucepan.
Add chia seeds. Stir vigorously with a whisk. Chia seeds will gel quickly and can clump. Then add cardamom, cinnamon, quinoa, fruit and maple syrup.
Warm on medium heat and stir periodically until desired temperature. Turn burner off and place lid on saucepan for a minute or two and the porridge will continue to thicken. Serve immediately. Sprinkle cinnamon and slivered almonds or drizzle maple syrup on top before serving.
Berries, diced pears, sautéed apples, bananas are nice additions when they are in season.
6 pounds of plums, washed (organic if possible)
6 tablespoons maple syrup
¼ cup tapioca granules
Cut in half, remove the pit and cut into pieces. I cut each half into four pieces. Place diced plums in a large bowl. Add maple syrup and stir. Let the plums macerate over night in the fridge or all day on the counter. Stir occasionally if it’s on the counter. This brings out the sweetness of the plums and breaks down the flesh. Put mixture in a large soup pot. Add tapioca granules at least 30-minutes before you are going to cook the plums. They need to begin to dissolve in the liquid. Bring to a boil. Place lid on pot, reduce heat and simmer for 10-minutes. Stir occasionally, the tapioca wants to stick to the bottom of the pan. Remove lid and gently simmer for another 10-minutes. Place in glass jars, let cool and refrigerate or freeze.
THIS RECIPE WILL NOT WORK FOR CANNING. Freeze for long-term storage.
