They’re as simple as layering scoops of super creamy Tillamook Oregon Strawberry + Old-Fashioned Vanilla Ice Creams with homemade strawberry-rhubarb jam and topping it all off with fiercely fizzy sparkling water. 💕 Creamy, sweet-tart effervescence that just screams summer. I just realized I never posted my tomato sauce recipe from Monday🤦♀️ Sorry y’all it’s been a WEEK! Anyone else so happy the weekends here?!?! •
Tomato Sauce Ingredients 🍅:
-3 tbsp olive oil
-1 whole yellow onion
-8 cloves of pressed (or minced) garlic
-1 can of crushed tomato
-1 can of whole tomato
-7 fresh basil leaves
-1 tbsp of fresh chopped parsley -1/4 tsp of sugar
-s&p to taste •
Tomato Sauce Directions 🍅:
-In a large pot add olive oil and onion. Sauté until translucent. -Add garlic and sauté for 30 seconds to a minute. Don’t let it brown! -Add crushed tomato. -Take whole tomato’s and crush with your hands. Add to the pot. -Add basil, parsley, s&p. -Cover on low and simmer for at least 30 minutes. -Once it’s finished, taste for tanginess. Add sugar a little bit at a time. You don’t want it too sweet!
-Taste for s&p. -Put it over noodles, zoodles, or even use it as a pizza sauce! 🍕 •

So I haven’t made one of these lavash pizzas forever. But when I started macros these were my crunch wrap! My turkey sub! My mighty muffin sundae! It was a full blown obsession and I worry I didn’t share it enough. So here it is.

I had so many other options to cook like an easy Chicken Marsala or even a basic pork tenderloin, but the only thing that sounded good (and low on the prep/cook scale) was pancakes so pancakes we ate!!

1 1/2 cup Flour
1 tbsp Sugar
1 tsp Salt
2 3/4 tsp Baking Powder
1 large Egg, lightly beaten
1 1/4 cup Milk
2 tbsps Butter, melted
1. In a large bowl whisk together the flour, sugar, salt, and baking powder.
2. I’m a separate bowl mix the egg, milk, and 2 tablespoons of the butter.
3. Add the wet ingredients to the dry and whisk until smooth.
4. Heat a large well-seasoned cast-iron skillet or griddle over medium-high heat. Coat with oil or cooking spray. Pour in 1/4 cup of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked, about 1 minute. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
