I see a lot of new faces and wanted to share a little about myself. I feel like I’ve shared my history and a lot about me over the years, but never have in one post, so now’s a good time I think! 💭 I’m a registered dietitian who helps individuals break free from restrictive eating and find their healthiest relationship with food and body 🙌 I recovered from my own broken relationship with these and am SO passionate about helping others do the same ❤️ My favorite foods are pizza and cookies 🍕🍪 (this is pretty evident from my feed 😂), and for a while I didn’t let myself eat either of them as often as I desired to. I based them on my super simple coconut curry noodle bowls, but I decided to make a thicker sauce and add a whole rainbow of veggies! If you're missing anything, I'm giving you plenty of substitution options. There's a good chance you can make this with what you already have in your pantry!

Set oven to 425 degrees, cut 2 baby bok choy in half + grate fresh ginger on top with a drizzle of olive oil. Add 2 tablespoons of hoisin sauce to each 6 oz salmon fillets and top with @traderjoes
Everything Seasoning. (I cooked 2 fillets for me and the kids to split). Drizzle olive oil on green onions. Salt + pepper everything to taste. Bake for about 12 - 15 minutes depending on the thickness of your fish.
For the #ketofriendly
version omit the hoisin sauce on the salmon and layer on top butter + lemon slices before baking. Serve both versions with lemon wedges!! 🍋

it was a longgggg monday and so I definitely took the liberty in making myself a tasty dinner. I have here a lemon parsley cod is breaded with whole wheat bread crumbs , roasted yellow and zucchini squash and a mixed greens side salad. the cod fillet was dipped in a beaten egg and then into a parsley , cumin and garlic based seasoning with the whole wheat bread crumbs the cooked for 3 - 4 min on each side. I love cod because it’s quick and easy to cook.

Creamy chicken, mushroom, & kale skillet dinner🥘
Start to finish in 15 minutes because you don't need to spend hours in the kitchen to make a yummy dinner. Start by caramelizing 1 onion and 1 package of baby Bella mushrooms with olive oil in a large nonstick skillet (don't crowd those mushrooms!). Remove and add more olive oil to the pan, and brown 2 sliced chicken breasts (seasoned with S+P) in the pan. Remove the chicken from the pan, deglaze with white wine and chicken stock. Add 2 tbs neufchantal, reduced fat cream cheese, or full fat sour cream. Add back in onions and mushrooms, chicken, and kale. Stir until the kale is wilted but still crisp. Stir in 1/4 cup Parmesan, divide into 2 bowls and top with more parm. Enjoy with your +1, mine was @stefanie_clark7

I want to know. What’s your approach to making treats? I have my traditional faves that I make and enjoy in their unhealthy glory.
But I love the challenge of making recipes a bit healthier. I tend to take the “healthyish” route versus changing all the things. I cut back on sugar, may swap regular flour for almond or oat flour, and cut back on butter - if the recipe still works.
For this apple crumble, I combined whole oats, oat flour, chopped pecans, brown sugar, and just enough melted butter to make the crumble stick together. Yes. You can use coconut butter. The flavor will be different.
Put that over sliced apples tossed with cinnamon and vanilla extract. Bake until golden and bubbly. Enjoy for dessert or breakfast if you want! Your choice 😊

One of the best salads I've had in a while 👉🏼Kale Caesar with broiled Salmon & spiced Chickpeas 😋I seasoned the salmon with salt, pepper, garlic powder & lemon juice then baked it on 350 for 15 minutes, and broiled for another 2 minutes. The chickpeas are tossed with olive oil, salt, pepper and paprika on a heated skillet for 5 about minutes
1/4 cup tahini
3 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp garlic powder
1/4 tsp fine sea salt
2-3 tbsp water to thin
1 tbsp nutritional yeast (or parmesan for non vegan)
Mix together in a bowl and massage onto kale
This Healthy Shepherd's Pie for Two is the ultimate comfort food! Who else loves cozy meals this time of year??
I'm all about leftovers for lunch so I typically double this batch when I make it. Another easy meal prep idea?! I think yes.
6 yukon potatoes, diced
1 tablespoons olive oil, divided
1 sweet yellow onion, diced
8 ounces baby bella mushrooms, sliced
1 tablespoon minced garlic
¼ cup red wine
1 cup shredded carrots
8 ounces lean ground sirloin
½ cup frozen peas
½ cup frozen corn
1 tablespoon flour
½ cup chicken broth
salt and pepper to taste
¼ cup plain non fat greek yogurt
1 cup 2% milk
½ cup shredded cheddar cheese
1. Preheat oven to 425 degrees. Line baking sheet with parchment paper; arrange potatoes, Drizzle with ½ tablespoon olive oil and salt and pepper and bake for 35 minutes.
2. In large pot, heat ½ tablespoon olive oil over medium heat. Sauté onions, mushrooms, garlic and salt and pepper.
3. When the vegetables begin to soften, stir in wine. Continue cooking to reduce wine a bit.
4. Stir in carrots and beef and cook until beef is browned.
5. Stir in peas, corn, and flour.
6. Add chicken broth and any additional salt and pepper to taste.
7. Whip the roasted potatoes with mixer with yogurt and milk.
8. Pour beef mixture into two small baking dishes (4X4) OR one 8X8 inch baking dish.
9. Layer beef with mashed potatoes and top with cheddar cheese.
10. Bake for 20 minutes until cheese is melted and tops are tops are browned.

It's my new favorite love in the soup world, with simple seasonings and the versatility of adding whatever vegetables or beans you like, this soup is a winner for everyone! Just swap more or less of whatever veggies you have on hand, and pinto beans would work great in this soup as well!
Tortilla soup 🍜
- 4 cups of vegatable broth
- 2 cups of cooked black beans
- 11/2 cups of crushed tomatoes
- 1 cup of frozen corn
- 1 medium onion
- 3 cloves of garlic
- 2 medium carrots
- 2 stalks of celery
- 1 small zucchini
- 1 orange bell pepper
- 1- 2 tsp of chili powder
- 1 tsp of cumin powder
- 1/2 tsp of dried oregano
- salt and pepper
Method: Chop onions, mince garlic and add to a large pot with a little broth, simmer for a few minutes. Chop the rest of the vegetables and add them along with the rest of the broth, crushed tomatoes and seasonings. Over low medium heat allow to cook for roughly 20 mins. When the vegatables are tender, add your black bean and frozen corn and cook for an extra 10 minutes. Once done, blend a few cups of the soup in a blender, then transfer it back to your pot and mix well. Serve with fresh parsley and cilantro, unsweetened coconut yogurt or cashew cream, avocado and tortilla chips. Enjoy! 🌿

👉🏼 dis bowl:
•roast baby tomatoes, red onion, and baby colored peppers drizzled in avocado oil at 375 for 15m
•add the gnocchi to the pan and continue to cook for 22m-ish
•remove from oven and mix with EVOO, oregano, rosemary, basil, and s+p
•add to a bed of arugula
Repurposed leftovers I can actually get behind 😋. I honestly hate leftovers. I don’t like to microwave food and I absolutely hate the way chicken tastes when reheated. But as far as leftover chicken goes, this bowl was bomb. I made some quick white rice and topped with @imperfectproduce
mushrooms sautéed with shallot + jalapeño (idk why it’s orange) + pickled cucumbers and onion + watermelon radish + cilantro + green onion and a very generous pour of @coconutsecretofficial

This is the type of record that would play in my head, over and over again.
I saw other girls braiding their hair, curling their hair, and doing other beautiful things with their hair. People would say things like “Ali, why is your hair so thin?” or “Your ponytail is so little”. They didn’t mean any harm, but it would send me deeper into a downward spiral of shame.
With my hair getting so thin, I felt like I needed to be beautiful in other ways to make up for it. I was afraid of eating certain foods or eating too much, because I was afraid of gaining weight AND having thin hair. I thought that I needed to stay skinny and be a good athlete, because those were the only things I could cling to for confidence. I was so consumed with being and looking a certain way, I didn’t realize that I was further damaging myself in the process.
I wasn’t free.
I was ashamed.
I was stuck.
Food, the very thing that could help me heal, was becoming an enemy.
