Anything with feta and capers makes me happy, and this cauliflower gratin from “Vegetarian Cooking for Everyone” was no exception.
First of all. Thank you all again for all the love, baby vibes and juju, texts, DMs. It was something I needed to let out and put out there. I am putting it out into the universe that we are ready for Baby K and we will enjoy the process 😉 . . . Now onto these not #tacotuesday enchiladas. I always stray away from enchiladas thinking they are too much work but seriously these babies were easier than tacos tonight. How I did it. . . Enchiladas for two: Crock pot 1lb chicken breast in 1/2 cup bone broth and 1/2 can of enchilada sauce (to lazy to make and couldn’t find the right peppers) on high for 4 hours. Pull out and shred. Heated up 6 @sietefoods tortillas on a cast iron about 10 seconds per side. Open a can of hatch Chiles and a can of sliced black olives. Spread some red enchilada sauce on baking pan (I used my mini @lecrueset ). . . Layer some Mexican cheese. Add shredded chicken, hatch chile, sliced olives as you wish. Roll and place seam side down. Keep going until the pan is full. Then drizzle the rest of the enchilada sauce on top. Add more cheese if pleased and top with olives. Bake at 350 for 7-8 mins until cheese is melted. Top with sliced avocado and wait for the compliments to roll in. Seriously guys it was so easy and my hubby wish I made more. Good thing we still have leftover shredded chicken for tomorrow.

Grilled white fish with coriander-buttered tomatoes and dill . Serves 4 . 4 tablespoons unsalted butter 1 teaspoon ground coriander ½ teaspoon ground cumin ¼ teaspoon garlic powder ¼ teaspoon cracked black pepper 1½ pounds tomatoes, cut into 1-inch pieces (about 4 cups) ½ tablespoon white wine vinegar Kosher salt 4 5- to 6-ounce fillets of flounder, cod, haddock or halibut Cooked brown rice (or your favorite grain), for serving (optional) Garnishes: A few sprigs of fresh dill, toasted walnuts, crumbled feta . Heat butter in a large skillet over medium heat, until melted. Stir in coriander, cumin, and black pepper. Cook, stirring, until fragrant, about 1 minute. Add tomatoes and cook, turning gently with a large spoon, until tomatoes are juicy and just warmed through, about 2 minutes. Add 1 teaspoon kosher salt and vinegar and toss gently to combine. Taste and adjust seasoning, if needed. Heat an indoor grill pan (or large skillet) to medium. Grill/sear fish until just cooked through, about 3-4 minutes per side depending upon the thickness of your fillet. Transfer fish to plates. To serve: spoon the buttered tomatoes over the grilled fish. Serve with rice or your favorite grain (great for soaking up the juices!), if desired. I’m not used to this ...leftovers!! 😬Since Twin A left my Tuesdays have really changed. I was able to do a Pilates class before work ..came home had a smoothie, packed up my lunch/dinner to go, and still had time to snap a pic! So maybe this is what meal prep is all about! Second time around...roasted delicata squash, potatoes, Brussels sprouts with pumpkin seeds and dried cherries, sautéed kale blend and a turkey burger. I also understand what morning exercise is all about! Set a great tone for the day and I felt super productive before the work day even started! After my workout I prepped my lunches & dinners for the rest of the week in under an hour 🙌🏻 . I hear time & time again how people don’t have time or it’s too expensive to eat healthy. Wanna know what I call that? A load of BS excuses 🤷🏽‍♀️✌🏼 . Every week I send my clients FULL meal plans written by a registered dietitian along with grocery lists & meal prep tips and I use the exact same plans to prep for myself—I’m telling ya, it’s a lifesaver! And why would you want to “stop for something quick” when you already had food made?! . So if I told you that eating healthy didn’t have to take forever or cost a fortune, would you do it?

Forget the pumpkins, Fall for me is about Butternut Squash and apples. ..And chili! I came across an intriguing chili spice blend when shopping at #SavorySpiceShop in Santa Rosa that had both cocoa and cinnamon. I love molé so I thought I’d build on this idea. I went looking for a nice beer to add a robust flavor and came across this Organic Chocolate Stout from #SamuelSmith . Added with butternut squash and beans, it came out great!! Here’s what I used in my: Butternut Squash, Bean and Beer Chili Recipe: 1 large yellow onion 4 large cloves of garlic 1 red bell pepper, diced 1 4oz can green chili’s 1 15 oz can Adzuki beans 2 15 oz cans kidney beans 2 15 oz cans black beans 1/2 cup Quinoa 1 26 oz carton Pomi chopped tomatoes 2 17 oz cartons Pomi tomato sauce 2 15 oz packages pre cubed Butternut Squash 12 oz of Organic Chocolate Stout 3 Tbsp Savory Spice’s Black Canyon Chili Powder 1 Tbsp Savory Spice’s Mild Chili Powder 1 qt Low sodium vegetable broth Sauté onions in a splash of broth about 1 min Add garlic and sauté another minute Add in the spices and coat the onions and garlic Add the rest of the ingredients reserving about half the bottle of stout. Stir and once brought to a boil, reduce to simmer for about thirty minutes minimum or until desired consistency. If it gets too thick add a little more of the stout and let cook through. Serve with freshly chopped cilantro and a squeeze of lime for tangy salty flavor. 🍝 One Pot Pasta 🍝 1 large onion chopped 3 cloves garlic minced 1 tbsp tomato paste 1 c chickpeas 1 c artichoke bottoms chopped 1 c black olives sliced 14 oz can diced tomatoes 14 oz can coconut cream 4.5 cups water 1 tbsp not chicken broth @betterthanboullion 2 tsp thyme 2 tsp oregano 16oz fettuccini pasta Salt & pepper to taste Parsley _______________________________________ •Sauté onion and garlic in pot until soft 3-5 min • throw everything else in except pasta and parsley and bring to a simmer • add in pasta and cook, stirring every minute or so, until the pasta is done and the liquid has become a loose sauce 10-12 min • remove from heat and let cool 5-10 minutes so the sauce can thicken up • top with parsley

Elephant Boogers. 🐘That's what my husband calls Brussels Sprouts! HA! Where's the sprout love! . . Honestly, I'm the one that created my non-sprout loving husband. I'm obsessed with them so much that I'd make them all the time and now.. well now if he sees me pull them out he walks up with hands crossed as if banishing them from his sight. We could eat potatoes for every meal and still never get sick of them! Our new fave way to prepare them is to cut them into chunks and bake in a covered dish until soft (they sort of steam when covered). Then toss with olive oil, salt, garlic powder, and smoked paprika and spread out on a baking sheet to roast until a golden crust forms. They’re smoky and crispy in the outside and so tender on the inside. Anyone else love potatoes? Do you like sweet potatoes or white potatoes better? #potatofans #spudlife

Tonight something interesting happened - I got hungry for dinner SO much earlier than usual- before 6pm! 😯 I wanted to make din, but THEN I thought, “But what if I’m hungry later. Then what do I do? Do I have a snack? I never have a snack at night, I always have dinner and dessert and then it’s time for bed.” 🤷🏻‍♀️ 🛌 • Then I thought about what I talk about with clients often - challenging patterns, avoiding rules 🤔 I realized, “DUH, Nicole, if you’re hungry later have a snack.” It was just so funny because it was so obvious! But because it was a break from my usual routine, it took a sec for me to realize how obvious it was 💡💡💡 • So I ate dinner earlier than ever (also funny bc it was pre-walk with @veggiesandchocolate who always eats before me 🤣) and satisfied the hunger right then and there 👌 And P.S. this is this week’s 15-minute meal!! I have LOVED how my body responds to eating homemade, filling, colorful meals. I have not necessarily loved the prep behind all of it. One of my solutions is to prep in little ways: packing breakfasts to go, making large meals to ensure leftovers for lunch the next day, crock pot dinners and freezing what's left. You don't have to meal plan and prep a week of food every time if you don't want to! Do what works for you! What do you do to make food prep a little less crazy? 🍳The food deets: roasted sweet potato with an egg scramble, including spinach, organic chunky salsa from @luckysmarket , and sausage.
Raise your hand if you have been put on birth control and your body freaked out, or if you have a hormonal imbalance 🙋🏻‍♀️Right after I was diagnosed with epilepsy, my family and I went to the Mayo Clinic hoping they could help me. Their suggestion was to put me on birth control at the age of 16. It was my first time going on it and up until that point I had only had two seizures. Two weeks after taking birth control I was up to 16! My body was freaking out and I had to go to the hospital because my seizures wouldn't stop. I was put on even more medication and started seeing a holistic doctor. Her first recommendation was to get off the birth control. 8 years later and after trying so many things I have FINALLY found something that works! It’s called Wild Yam extract and after having irregular periods for 8 years, they are finally normal! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wild yam is a root that is the ultimate hormone balancer. If you have too much estrogen it will bring it down and if your progesterone is low it'll bring it up or vice versa. It contains diososin, which is converted into diosgenin in your body and helps to regulate the production of estrogen and progesterone.⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wild Yam soothes painful cramping during your period and it helps the uterus to work more efficiently, also helping with ovarian cysts. My sister has endometriosis and ovarian cysts and has started taking this too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It also helps with fertility. There are different tribes, such as the Yaruba tribe in Nigeria, that eat a lot of wild yam and have a super high rate of twins and really healthy pregnancies. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ If you have a hormonal imbalance, an irregular period, or are struggling after being on birth control I recommend researching this and trying it.⠀⠀⠀⠀⠀⠀⠀⠀⠀ I took it for 2 months before I saw a change in my cycle and an improvement in my seizures. Anything with noodles and sauce - we're in 🙋‍⠀ via: @eatingbyelaine :⠀ ...⠀ "Cozy dinner tonight... dairy-free and ultra creamy roasted red pepper sauce over gluten-free capellini noodles. 🍝⠀ ⠀ How I did it... .⠀ To a high speed blender I add: .⠀ ▫️8 ounces roasted red peppers (I use jarred when I'm in a hurry)⠀ ▫️1 cup raw, unsalted cashews (soaked in advance if possible, then rinsed and drained)⠀ ▫️1/2 cup filtered water⠀ ▫️1/4 cup diced red onion⠀ ▫️1 teaspoon salt⠀ ▫️1/2 teaspoon ground black pepper⠀ ▫️1/2 teaspoon garlic powder (or 2 garlic cloves)⠀ ▫️1/2 teaspoon onion powder⠀ ▫️pinch of red pepper flakes (optional for heat)⠀ ⠀ Blend until smooth and creamy. 🍥Taste and adjust seasonings if needed. paleo chocolate chip cookies 🍪 to celebrate @katandreeff ‼️ came out super chewy and only took 5 minutes to make: -1 cup almond butter -1 egg -1/2 cup maple syrup -1 tsp baking soda -1/2 tsp vanilla Pinch of cinnamon Chocolate chips (about 1/2 cup) Bake at 350 for 10 min.
I get asked often, “But isn’t this healthier...?” And my answer is always, BOTH are healthy - it just depends on what YOU want. I am not here to knock Reece’s and I have nothing against Justin’s Butter but I do know this: Some people actually feel satisfied with a JB cup and some people cannot stand the chalkiness of it but will eat it anyway, just because “it looks healthier.” • I’m here to say that you don’t get bonus points for eating something you dislike. There’s nothing holier about a JB cup (except maybe the hole in your wallet for paying $3 for a chocolate bar 😅) If JB satisfies your craving, awesome! 👍🏽 But if Reece’s is your preference than go for it 👍🏽.There’s no sense in eating 5+ different things just to avoid the one food that will actually satisfy your craving.
My Pecan Butter Crispy Squares are the PERFECT dessert for Fall 🍫I was scrolling through my feed and remembered how much I love them-plus they're easy to make and can be made with any nut butter of choice! Recipe: 2 cups puffed rice cereal 4 medjool dates ½ cup pecan butter (I used @artisanaorganics ) ⅓ cup maple syrup 2 tablespoons coconut oil, melted 1/3 cup dark chocolate chips melted with 1 tsp of coconut oil (I used @enjoylifefoods ) 1/4 cup pecans, chopped 1. Line a 9 X 5 bread pan pan with parchment paper 2. Place the puffed rice cereal in a large mixing bowl and mix with the pecan butter, coconut oil and maple syrup. Set aside 3. In a food processor, blend the dates with 2 tbsp of water until smooth. Add in the cereal mixture and pulse until well combined. 4. Spread the mixture into the bread pan. Freeze for at least 30 minutes, until its firm to touch 5. Once firm, remove from bread pan and coat in melted dark chocolate & top with pecans 6. Slice & enjoy. Best stored in freezer

Made a simple lunch before leaving for the airport, and have a bunch of snacks packed for in-flight entertainment (currently watching: Hocus Pocus 🧙‍♀️👻 ). - #whatsonmyplate : crispy seared salmon 👉🏻 season salmon fillet with sea salt and black pepper. In a non-stick pan, heat 1 tsp. avocado oil (or garlic ghee) for one minute. Add salmon filet, skin side up, and sear for 3 minutes, then flip and let it finish cooking on its skin (approx. 4 mins). •• grain-free @mikeys toasted onion english muffin toasted and topped with garlic ghee + avocado + ‘everything but the bagel’ seasoning •• kale caesar salad 🌿👉🏻 toss baby kale with @primalkitchenfoods caesar dressing + hemp hearts + red pepper flakes + parmesan. - Hope you’ve all had a great Tuesday! ❤️ Catch ya from Boise! 😘
