🎄 Vegan Xmas Seitan Wellington 📷 by @mymeatlessmeals 🚨🚨Recipe: Serves 4 (approximately 8 pieces) For seitan: • 1 cup vital wheat gluten flour • 2 tbs plain flour • 200 g raw beet, peeled and chopped • 1/2 cup water • 1/4 cup coconut oil • 2 tbs onion powder • 1 tsp salt, black pepper, smoked paprika, Italian seasoning, and thyme • 1/2 tsp garlic powder • 1 tbs Dijon mustard The rest of the ingredients: • vegan friendly puff pastry • 500 g portobello mushrooms, finely blitzed and sautéd to get rid of the liquid and season with a pinch of salt • vegan butter for searing seitan Instructions: 1. Make seitan by adding all wet ingredients and spices/ seasonings to the blender, blend until smooth. 2. Mix dry ingredients with the mixture, knead for 5 minutes and leave to set before forming a log. 3. Wrap your soon-to-be seitan with parchment paper and cheese cloth, as shown in video and steam on medium heat for 50-60 minutes. Allow to cool before searing. 4. Spread cooked portobello mixture on plastic wrap before placing seitan on top and wrap it tight and snug. Refrigerate for half an hour. 5. Unwrap your mushroom wrapped seitan and place on puff pastry sheet before wrapping. 6. Brush the uncooked pastry with non dairy milk to glaze, add a letter if you're feeling fancy. Bake at 350 for 25-30 minutes or until golden brown. 7. Serve hot with a side of roasted vegetables and vegan red wine jus 8. Indulge. 😍 Buffalo Cauliflower Wings 📷 by @alexafuelednaturally 🚨🚨Recipe: 1 head of cauliflower 1 1/2 Cup unsweetened almond milk 1 Cup brown rice flour 1 tsp garlic powder 1 tsp onion powder 1 tsp of paprika 1/4 tsp sea salt 1/4 tsp ground pepper 1 Cup vegan buffalo sauce INSTRUCTIONS 1.Preheat oven to 400 degrees F and line two baking sheets with parchment paper. 2.Next, prepare batter. Mix dry ingredients together, and then add almond milk. Stir with a whisk or fork until well combined. You want the batter thick but pourable so it can stick to the cauliflower… if it is too runny, it won’t stick. 3.Once the oven is preheated, add cauliflower one at a time to the batter to coat. Shake off excess and place on baking sheet. Easiest done with a fork! Give each piece 1 inch of room. 0.Bake for 15 minutes then remove from oven. Carefully dip each cauliflower into buffalo sauce then place back onto baking sheet. Bake for an additional 15-20 minutes! The second round of baking will make them extra crispy! VEGAN KOLACHKY CHRISTMAS COOKIES 🎄my friend described these as “little pie cookies” and that’s actually a pretty spot on description! These taste a bit like pie and a bit like cookies and are my family’s favorite Christmas cookie tradition! They take a little bit of patience but are well worth it. Make sure to read through the recipe before making 😊 Hope you enjoy them as much as I do! ∙ Recipe👇🏼 ∙ 1.5 cups all purpose flour 1 cup vegan butter (earth balance) 1 tbsp plant milk, unsweetened 8 oz vegan cream cheese (I used tofutti) 1/2 tsp baking powder 1 tbsp sugar 1 egg replacer (bobs red mill brand) Thick preserves: raspberry & apricot are my fav! Pick your favorites! Powdered sugar for topping! ∙ Directions👇🏼 In a mixer (can also do in food processor) cream together the room temp. butter, cold cream cheese, milk & sugar. Add egg replacer and mix until combined. Sift flour & baking powder into the bowl and mix until combined. The dough will be very sticky- this is normal! You should still be able to scrape dough out of bowl and form into a firm yet sticky ball, so if it’s not there yet add 1-2 tbsp more of flour until you can form a ball. Chill the dough in fridge for a minimum of 2 hours, or overnight for best results. When ready to bake, preheat oven to 400 degrees. Taking half the dough at a time (keep other half refrigerated) roll out with rolling pin on a well floured board until 1/4” thick. Cut into 2.5” squares using knife or square cookie cutter. Place your squares on silomat or parchment lined cookie tray. Place about 1.5 tsp of jam in center of each square. Now fold two opposite edges to come together in middle. Pinch closed, fold the pinch over itself and pinch closed again. Some of these will inevitably come apart in oven but try your best to seal well. Bake for 14-16 minutes or just until bottom and edges begin to turn brown, a little longer if not yet colored. Cool and sift powdered sugar over the top. Makes 20-22 cookies!

It’s nearly Christmas and I’m making even my breakfasts as extra as possible 💅🏻 My favourite thing to cook at the minute is this banana bread pancake recipe. It doesn’t use refined sugar and it makes thick, fluffy pancakes that are delicious topped with just about anything - I’ve opted for coconut yoghurt, almonds, frozen raspberries and cacao nibs 😋 • • 60g buckwheat flour • 1/2 tsp baking powder • 1/2 tbsp bicarbonate soda • 1 tbsp ground flaxseeds • 1/2 banana, mashed • 120ml almond milk • 1 tbsp maple syrup • Combine all the dry ingredients in a bowl, then mix in the wet ingredients to make a thick batter. Heat a large non-stick frying pan and melt a little coconut oil on it. Drop your pancake batter (around 2 tbsp per pancake) onto the hot pan - it’s thicker than regular pancake batter so you can use the spoon to flatten and shape them a little. Wait til you see bubbles forming in the surface of the pancake, then flip it over and cook the other side. Who’s up for some Coconut Chocolate Almond Rolls? 🤤 The filling of these is out-of-this-world delicious! The secret ingredient is @rustysnuts ’ amazing coconut cacao almond butter! Be careful, it’s addictive 🤩 These rolls are so fragrant and comforting. Trust me, you have to make them! Serve them warm with some extra chocolate & nut butter on top, and devour 😍 . Recipe: Dough: 💖2+1/4 Cup all-purpose flour (divided) 💖2 Cups wholemeal flour (I used 1 Cup whole wheat flour + 1 Cup whole spelt flour) 💖2 Cups dairy-free milk, at room temperature (heat it in the microwave for a few seconds if you take it straight out of the fridge) 💖1/2 Cup vegan butter (melted) 💖1/4 Cup brown sugar 💖2+1/4 Tsp active dry yeast Filling: 💖1/4 Cup chocolate chips (melted) 💖3 Heaping Tbsps @rustysnuts ’ coconut cacao almond butter 💖2 Tbsps vegan butter (melted) Icing: 💖2 Tbsps coconut butter 💖1 Tbsp almond butter 💖1 Tbsp maple syrup 💖Optional: melted chocolate . 1️⃣ Mix all the wet dough ingredients in a bowl. It should be warm but not hot. 2️⃣ Add the yeast to the mixture and let it sit for 1 minute. 3️⃣ Add 4 Cups of flour (2 Cups wholemeal flour+2 Cups all-purpose flour) and mix until combined. 4️⃣ Cover with a plastic wrap/towel and leave in a warm place (I placed it in the oven on a very low temperature) for 1 hour, until the dough doubles in size. 5️⃣ Preheat the oven to 180 Celsius on turbo setting, and line 2 pie pans with parchment paper. 6️⃣ Remove the plastic wrap/towel and add another 1/4 Cup of all-purpose flour (more if it sticks to your hands). Mix until combine, and transfer to a floured surface. 7️⃣ knead the dough and roll it out into a large rectangle, 1/2-1 cm thick. 8️⃣ Mix all the filling ingredients in a bowl and then spread evenly on the dough rectangle. 9️⃣ Roll up the dough and cut it into equal pieces. Divide them between the 2 pie pans. Cover the pans and place them in a warm place for another 30 minutes. 🔟 Uncover the pie pans in the oven and bake them for 25 minutes. In the meanwhile, mix the icing ingredients in a bowl and melt some dark chocolate in a separate bowl, if you’d like. Drizzle both mixture on top of the rolls once they’re done baking. ENJOY!😍

Full of tempeh, cucumber, onion, yellow pepper, red pepper, tomato, avocado, mixed greens and smothered in thousand islands dressing and about 20 napkins hahaha. . It makes me sad that in today’s society it’s so rare to find someone that has a healthy relationship with food and hasn’t at one point or another had an eating disorder or fallen into a cycle of disordered eating. There’s so much misinformation out there, such as that you have to eat 1500 calories and run 10 miles every day to get healthy and fit, which in turn puts people off from living a healthier lifestyle. I’m the healthiest now than I’ve ever been before, but eat a LOT of food (mostly wholesome stuff but with plenty of treats too, which I don’t even consider ‘treats’ because I don’t like labelling food) and exercise a very moderate amount. I always talk about building a lifestyle that you can sustain because that has helped me reach my fitness goals while staying perfectly happy and healthy both physically and mentally. Let me know - have you thought about what health and wellbeing goals you’d like to achieve in 2019? I used to not care for oatmeal but now I want to get married to it 👰🏼 it’s the most versatile breakfast like ever. So versatile, in fact, I’m eating it for lunch hehe. This porridge is made from bulk staples and is naturally sweetened with applesauce and overripe pear, with a mound of tahini and a sprinkle of cinnamon and chia. Also there may be a touch of maple syrup in there because I want to marry that too 🍁
{Lebkuchen 🧡 da lacht mein Weihnachtsherz 🎄😄} Die liebe @tanjaaaaaatre hat mich vor 3 Wochen gefragt, ob ich auch ein Lebkuchenrezept habe. 😬Jawohl, vor drei Wochen. 🙈Was bin ich langsam. #schäm Aber es muss halt auch (für unseren Geschmack) perfekt sein, sonst wirds nicht empfohlen. ☝🏼Die sind jetzt wirklich großartig geworden... #eigenlobstinktichweiß 👌🏼😍 Wirklich richtig lebkuchig lecker! 🤤Also wenn man auf die runden Lebkuchen steht, die oben Zuckerguss haben und unten einen Boden aus dunkler Schokolade, dann sind das genau die richtigen! 😬Außer, dass ich unten keine Scholokade drangemacht habe... ;🙄Ihr wisst ja, tunken und so. 😆 Also leben wir mal los: 🧡500 g Vollkorndinkelmehl, 230 g feinen Rohrzucker, 20 g Vanillezucker, 4 EL Kakao, 2 EL (gern gehäuft) Lebkuchengewürz, und 1 Tütchen Backpulver vermischen 🧡In einer zweiten Schüssel 250 ml Soja-Kochcreme/sahne, 3 EL Rapsöl und 1 EL Amaretto vermischen 🧡Nasse Zutaten zu den trockenen geben und zu einem geschmeidigen Teig kneten und diesen ca. 30 Minuten ruhen lassen 🧡Teig ca. 1 cm dick ausrollen und Lebkuchen ausstechen 🧡Lebkuchen bei 180 Grad in ca. 12-15 Minuten (immer mal wieder reinschauen, damit sie nicht zu dunkel werden) backen 🧡Vollständig abkühlen lassen 250 g Puderzucker, 1 EL Orangensaft und etwas Wasser zu einer Glasur verrühren (Wasser nur in ganz geringen Mengen zugeben, das wird sonst schnell zu flüssig) und die Lebkuchen damit bestreichen und nach Wunsch verzieren ➡️Fertig😄 Ich hoffe, dass überhaupt noch jemand Plätzchen und Kekse sehen kann, ich auf jeden Fall schon! 😋Allerdings herrschte (und herrscht) bei uns ein strenges Plätzchenregiment. 😎Die gabs bei uns früher nur am Wochenende bzw. zu Kaffee am Nachmittag. ~ Good Tuesday ☁️ Just took an exam this morning and didn’t have time to finish it - and on top of that, I’ve been working on it all night long. 😞 Now, all I wish is to go back to sleep and forget about the whole thing.. 💤 This 3-Ingredients Vegan ‘Nutella’ Molten Cake would be really needed at the moment - in order for me to a bit comforted. 😌 🍫 👉🏼Ingredients : 150g vegan chocolate spread ( ‘Nocciolata’ and ‘Jardin Bio’ are pretty nice brands ), 4 tbsp applesauce, 50g cake flour. 👉🏼 Directions : In a bowl, combine all the ingredients together and mix until smooth. Divide the batter into cupcake molds and bake for about 6min or bit more at 200ºC - sit and watch the cakes cook. Habt einen schönen Tag ☃️🌲🦌🛷 . . . 150 gr zimmerwarme pflanzliche Butter 180 gr Dinkelmehl 1/2 P. Vanille Puddingpulver 50 gr Puderzucker 2 P. Vanillezucker 1 Prise Salz 1/2 TL Backpulver * Zum Bestreuen: 60 gr Puderzucker, gesiebt 2 P. Vanillezucker * Backofen auf 160°C vorheizen und 2 Backbleche mit Backpapier auslegen. Alle Zutaten zu einem glatten Teig verkneten. Von dem Teig Haselnuss große Stücke zupfen, zu Bällchen formen und mit etwas größerem Abstand auf das Backblech setzen und für ca 15 min backen. Puderzucker und Vanillezucker miteinander vermischen.
