Baked and shot a fancy dessert after a really long time!! One thing I've learnt is, fancy food dose not have to be time consuming, nor it needs to have fancy ingredients! Made this cake with whatever I could find. Tried out this place for the first time. Tasty & reasonable prices. Only thing I have to complain about is that there wasn’t enough space for seating & the ice cream sandwich churro was a bit too dense. I think adding more ice cream would have helped with the ratio. Otherwise great place!

I went to the mall today for the first time in a long time and I walked by all of the stores and restaurants including The Cheesecake Factory and of course it reminded me of cheesecake which in turn reminded me of these DOUBLE CHOCOLATE RASPBERRY CHEESECAKE BARS that I haven’t made in forever. 🍫 🧀 🎂 Perfect for a lil weekend no-baking if you ask me! I’ve gotten lots of requests for more vegan “cheesecake” recipes so I think I need to whip one out in February, whatcha think? Roasted Veggie & Brown Rice Salad: Made with red & yellow bell peppers, 2 zucchini, half a sweet potato & 1 onion. •
Arrange the chopped veggies on 2 nonstick baking pans and drizzle with olive oil and dried oregano, salt and pepper. Place in preheated oven at 400°F for 30-40 min until tender. •
Toss the veggies and 4 cups cooked brown rice with 3 tbsp olive oil, 1/2 tsp sweetener of your choice, 1 tsp dry mustard, 1/2 tsp salt, 1/2 tsp black pepper, 1 tsp dried oregano.

• 1 ¼ cup whole wheat pastry flour, regular white flour or gluten free flour (I like the Bob’s Red Mill 1 t 1 baking flour)
• ½ tsp baking soda
• ¼ tsp baking powder
• ½ tsp salt
• ½ to 1 tsp cinnamon
• 1/3 cup packed brown sugar
• ¼ coconut oil
• 3 well mashed very ripe bananas
• ½ cup pumpkin puree (unsweetened) or mashed sweet potatoes
• 1 egg
• 1 tsp vanilla extract
• ½ cup Dark chocolate chips or chunks (kind of optional but don’t be a hero! DO IT 😘)
• Mix wet ingredients and dry ingredients separately.
• Add dry ingredients to wet and stir until just mixed.
• Fold in chocolate chips if using.
• Bake in muffin tin at 350 for about 22 minutes or until toothpick comes out clean.

My brain used to basically be a calorie calculator. I couldn’t make anything without adding up all of the ingredients as I went. It was exhausting. 😖 Can you relate?
No one (not even me, a registered dietitian!) can tell you the EXACT amount of calories or macros you need each day. That’s all you, girl! 💁♀️Which is why it is SO important to quit the mental gymnastics with calories and start to eat intuitively. By doing so you’re likely to END the restrict binge cycle that usually comes from being calorie obsessed
Tonight I made ☝️ butternut, apple & cauliflower soup topped with air fried chicken bites, feta, and basil. I have zero idea how many calories were in this, but I DO know it tasted amazing, my body is satisfied, not too full, and not too stuffed.
How I did it: 2 cups butternut squash, cubed + 1 apple peeled and sliced + 2 cups frozen riced cauliflower + 1 tbsp nutritional yeast + 1/4 onion chopped + dash of salt, turmeric & garlic powder + 2 cups milk or water. Pressure cook in the IP for 7 min and immersion blend. Makes 2 large servings.

It's a banana weekend, cuz we're snowed in! Tostones actually. Twice fried plantains. My daughter is home from university. She's on her Puerto rican food trip( cannot blame her). I made carne guisada, Puerto rican beef stew, with potatoes and olives. Instead of bread, it is gluten free tostones. They are unripe plantains, smashed and twice fried. You can serve them with garlic butter, granulated garlic, mayo ketchup( mayo and ketchup mixed) or in this case, sprinkled with sazon and adobo seasoning. Usually. Tostones are really green, unripe plantains. However, imo, they can be dry. I use green plantains, with a little ripeness. When done this way, the natural sugar in the plantain is present. Resulting in a crispy outer plantain and a creamy, Less dry plantain all together. I added pics to see the color.
With a pairing knife, slice the peel from top to bottom, cutting gently along the natural plantain lines.
Remove top and bottom peel.
Slice in one inch thick pieces
Heat oil, about 225
Place sliced plantains in one inch neutral oil. Fry about 2 minutes each side.
Do not brown
Taking the back of a wooden spoon
Lay plantain on clean counter or cutting board. Take back of wooden spoon and gently press down. Creating a flat plantain. If plantain sticks to the spoon, just use a butter knife along the spoon by gently running the butter knife between the plantain and spoon.Repeat as needed until all are fried and smashed.
Place smashed plantain back in hot oil, fry until golden brown. 2- 3 minutes.
Remove from oil, drain.
Season to your liking while hot
They do not need to be served warm. You can set them aside while cooking. They go great with stew, soups and chili..even a salad.

Homemade Cantonese Wonton Noodle Soup is such a basic, no-brainer bowl of noodles that you’ll find at most Cantonese restaurants. If you’re not near a Chinatown or a Cantonese place, you’ll definitely want to give it a try at home! It's soooo deelish 😋 ***************************************************
16 oz. ground chicken
3/4 teaspoon salt, plus more to taste
1 teaspoon sugar
1 teaspoon sesame oil
1/8 teaspoon white pepper
1 1/2 tablespoon shaoxing wine
2 teaspoons oil
1 tablespoon water
1/2 teaspoon cornstarch
1/2 pack wonton skin (the square-shaped egg wonton skin)
12 oz. wonton egg noodles
8 cups good chicken broth
Start by making the filling. Add the chicken, ¾ teaspoon salt, sugar, sesame oil, white pepper, wine, oil, water, and cornstarch to a bowl and whip everything together by hand for 15 minutes. You want the chicken to look like a paste. .To make the wontons, take a wrapper, and add only about a teaspoon of filling. Use your finger to coat the edges with water (this helps the two sides seal together), and fold in half so you have a triangle shape. Bring together the two outer corners, and press to seal. Continue assembling until you've used up the filling (this recipe should make about 3-4 dozen wontons).To assemble the dish, heat up the chicken broth in a medium pot. Adjust seasoning by adding salt, to taste. Bring a large pot of water to a boil and boil the noodles just until al dente. Divide among your bowls. Add the wontons and boil for about 4-5 minutes until they float and the filling is cooked through. Divide wontons among the bowls, and cover with hot broth. Add a couple drops of sesame oil, chopped scallion, and white pepper over the top!
