I took these to my neighborhood cookie swap this weekend, but made a double batch so we could save some in our freezer as well. They definitely won’t last long though! They have just the right amount of sweetness while the olive oil, and cashew butter along with the protein powder provide longer lasting energy so you don’t get that sugar crash! I hope you enjoy them! 🥰

1 pack of ground beef (I used about 12 oz (half a Costco package), but could use more or a little less
1 can condensed tomato soup
3/4 can of water (use tomato soup can)
3 cups sharp cheddar cheese shredded
1 medium onion, diced
2 Tb cumin
1 Tb chili powder
2 Tb olive oil
Sauté onion in 2 Tb olive oil until cooked down and started to become translucent. Add in ground beef and cook until beef and onion are browned and cooked through. Stir in cumin, chili powder, and season to taste with garlic salt and pepper. Add in can of tomato soup and 3/4 can of water. Stir to combine and let cook down for 15 min. Meanwhile, bring water to a boil and cook pasta per package instructions. Drain pasta and add into pan with sauce and meat. Stir in cheese. Taste for flavor and add in more cheese or spices if needed. Enjoy!
I made a batch of mini crustless quiches aka “egg muffins” this morning to have on hand for Cal for breakfast. I made six muffins thinking they’d last three days (the ideal number of prep ahead days in my opinion) but Cal ate FOUR this morning, so it’s safe to say these will be on regular rotation going forward! They are SO easy and SO helpful to have on hand ready for busy mornings or lunches! They are adult friendly too! 😆 Here’s the recipe:
In a mixing bowl whisk together 6 eggs, 1/4 cup full fat coconut milk, 1/4 tsp trifecta blend (or the equivalent measure of sea salt, pepper and granulated garlic). Grease a muffin tin and fill 6 holes 1/4 way up with cooked ground beef (about 2oz total). Pour the egg mixture on top of the beef filling the cups up 3/4 of the way. Top with crumbled feta cheese. We use the sheep’s milk feta from Trader Joe’s. Cook at 350° for 20-30 minutes. Let them cool a bit before serving and let them cool completely before storing in the fridge for a couple of days! You can also freeze them!
With two toddlers in the house, nearly everything gets touched. But that’s ok. I want my kids to grow up in an environment that they can actually live in, but isn’t so kid proofed that they don’t know what to do with themselves when we’re out in the world where things are not so kid friendly. I aim to have the things within their reach be touchable, safe, and invigorating to their developing little brains. Not much kid proofing happens at our house, but a lot of learning the right touches with the things that parents say are good to touch. A CHILD-FRIENDLY HOME
When we become new parents, there is so much emphasis on designing a nursery. There may be some “child-proofing” around the main living areas, but not much else.
What I really think we should be asking is this: How can I create a home that meets the needs of every family member?
Babies and toddlers have a strong biological drive to explore. That is how they learn about the world. It is how their brains develop optimally. So I find it *very* important to ditch the Play Pen Mindset (where we keep them contained or secluded) and just lovingly weave them into our home. ❤️
Here are some elements of our child-friendly home:
✨ Our home is small, which serves both my children AND myself. I can see or hear them no matter where I am, and it’s easy to clean.
✨ We have a floor couch. They can sit on it, nap on it, jump on it. I don’t have to worry about them falling off during the baby/toddler period. I can easily take the cover off and wash it weekly.
✨ We intentionally chose rugs and linens that hide stains pretty easily.
✨ Only non-breakable decorations within reach. Even better: Toys and baskets that double as decorations.
✨ We have a family bookshelf, with adult books on the upper shelves and a basket of children’s books on the bottom shelf.
✨ Their toys are woven into our main living areas. This way, I can cook or do whatever I want and my kids can play nearby without feeling isolated.
✨ All dangerous objects and even our natural cleaning products are waaay out of reach and we keep the cabinets pretty empty so they can open them whenever they want.

FIVE MINUTES TO HOMEMADE ICECREAM 🍦I have an actual ice cream maker, but it is just taking up valuable space in my freezer. It’s a shame because it was actually pretty expensive... but I don’t use it because I’ve found the EASIEST and QUICKEST way to homemade ice cream is to put frozen bananas + frozen blueberries along with whatever other mix-ins you like all in your food processor and blend in high speed until you have ice cream! Using the real ice cream maker takes hours! This takes minutes!! And it is SoOoOo good! The bananas and blueberries are so sweet, there is no sugar needed!
Have you ever made your own nut butter? It is literally the easiest thing! We are headed to our neighborhood cookie swap this afternoon and I needed some cashew butter for my recipe! I didn’t have any store bought but I did have some raw cashews so I just through them in the food processor with some olive oil and BOOM 👊🏻 nut butter.

▪️1/3 cup tahini
▪️1/3 cup molasses
▪️1 tsp vanilla extract ◾️1 egg
◾️1/2 tsp baking soda
◾️A pinch of salt
◾️1/2 cup almond flour
◾️1/2 cup oat flour
◾️1/2 cup coconut flour
◾️1/2 cup sesame seeds
Mix all the ingredients together until well combined except the sesame.
Roll small balls out of the batter into the sesame to fully coat them then press them slightly on a baking sheet. Bake for 12-14 min in a 180 degrees Celsius preheated oven.

Most nights I L💕VE to cook, but last night the thought of it was dreadful. We started having Emelia sleep in her own room two nights ago and it’s not going as well as we had hoped. 🤷🏻♀️She is up ALOT more and we are all kind of in zombie mode over here. 🧟♀️ Any advice, tips, tricks or worlds of encouragement are greatly appreciated!! Last night I had ZERO energy to make a meal so it was sandwiches for everyone.🥪
I love using collard greens for my wraps these days. They are really hearty and strong so you can really fill up your wrap! A green leaf or Bibb lettuce work well too! 🥬
