Cooking is one of my favorite things, but I never follow recipes (even if I look them up for inspiration). Basically: what tastes good, and what tastes good with it? I am trying to meal plan more, which means looking at what I have and then what I need to make it into a meal for the week. For this one, all I needed to buy was dill, which I just realized I love. I guess I made a recipe? Idk. This would be better with Sunrise extra firm tofu, instead of this firm silken tofu, so I’ll try it again that way.
Recipe? I guess? -Two blocks firm tofu, pressed overnight, then cubed -1/4 a small pack of organic baby dill (or more? I’m not your boss) -2 tbsp oil of your choosing (I used a light olive oil) -Thin slices of 1/2 a lemon (I used a Meyer) -1 tbsp salt, plus more to taste when roasting
Let marinate overnight, tossing intermittently to ensure even flavor distribution. Transfer to a baking sheet with parchment paper, and bake at 350 “until it is done,” stirring periodically to help even browning. I think I was baking this for about 60-75 minutes.
Eat with slivers of the roasted lemon (I *cannot* believe I am enjoying lemon in a savory dish, but it is So Good)
