Tonight: Garlicky shrimp zucchini pasta with tomatoes. Soooo, this is my first time ever cooking with zucchini noodles and I'd say it was a success! I definitely wasn't prepared for how much they shrink so be mindful of that. I made this super easy cream sauce, cooked down the tomatoes, added the zoodles and boom!
Dinner...let’s just say I’m a sucker for Naan bread. I need to make an almond flour version so I can be guilt free about it when I tear it up. I’ve been eating a lot of Greek lately, I guess because I love tart and pungent flavors. A lil Tahini sauce and we could be best friends. So I annihilated some falafel, sautéed some mushrooms and zucchini with lemon pepper, garlic and butter, made a lil bit of Tahini, sliced up some tomatoes and demolished my plate in a heartbeat. I’m happiest when my kitchen is organized and clean and today we (kiddo and I) got to do that.
