Breaking my fast at 1:30p, I decided to use up some of the leftover stuff in my fridge. So I started with 1/2 onion and some mushrooms in the wok with some bacon fat. Next, in went some greens (chard, bok choy and spinach) and a small piece of sirloin cut in small pieces. I also added in some garlic and ginger.
After that, I went for the leftover Hot Pot Broth along with some sesame oil, a shrimp, chicken, pork and more beef. Can you see where I’m going here?
Once the broth reduced, I scrambled in 2 eggs with some chili oil. I topped it off with 1/2 avocado (yes I ate the other half), sambal,bean sprouts and green onions.
I don’t know what to call this besides a mess but I am full and my fridge is cleaner so that’s a win in my book!
