I’m trying something new: a feta and red pepper kalinte, a Moroccan version of a pie made from chickpea flour. I’m trying to use more chickpea flour in my cooking, not only because it’s gluten-free, but also because it’s so nutritious. Chickpea flour is known as garbanzo bean flour or besan. It provides more protein than wheat flour and is particularly high in folate. One reason we all should be eating more legumes is that they nourish your beneficial gut bacteria. Chickpeas are known to provide a type of soluble fiber that feeds butyrate-producing bacteria in your gut. Butyrate is a short-chain fatty acid that has many health benefits, including boosting your body’s production of immune-supportive T- regulatory cells.
