I’m embarrassed to say I’ve done this.
I’ve eaten food that tastes like crap because that’s what I thought I was supposed to do.
Never in my life would I have considered eating egg whites. Once, I saw a friend using all egg whites, kale, and tomatoes to make the “healthy breakfast her personal trainer recommended”. I tried it at home and nearly threw up.
It wasn’t until I started counting macros in early 2014 that I considered trying it again. Why? Because I saw a YouTube video of someone else blending them this way. They also weren’t afraid of using salt, cheese or salsa to spice things up. They wrapped that bad boy up in a big tortilla and even added a strip of bacon! I was SOLD.
When I tried it myself I couldn’t believe the difference. Since then I’ve learned a few things about cooking egg whites blended with a REAL egg to make it even more tasty!
1) Use a good quality, non-stick pan.
2) Cook them on low heat.
3) Use some kind of oil spray before adding egg whites.
4) Don’t touch/flip them until they’ve turned a bit crispy on the outside.
5) For the love of God, use salt and seasoning.
6) Load it up with your favorite toppings, lite cheese, salsa, or avocado. I also really enjoy wilting diced spinach in a bit of olive oil, garlic salt, and diced garlic to give it that extra nutrition and flavor when I’m not in a hurry.
My point is: It doesn’t have to taste like crap for it to be healthy. If you know your macros you’ll be surprised how creative your mind can become and the tasty things you come up with ❤️ #momlife
There were seven bags of everything bagel gluten free bagels. I bought four. I bought 4 loaves of gluten free whole grain bread. One bag of plain bagels. One loaf of gluten free white bread. In addition to what I already have. Gluten free blueberry bagels, gluten free hamburger buns and gluten free whole grain bread. Seems excessive, yes. But company is coming. And Trader Joe’s a couple of days before Thanksgiving....😬 You get what you need and you get out of there.
And wine. I didn’t forget the wine. #priorities

The coconut aminos are a healthier substitute to soy sauce, and just a little bit sweeter. Lifesaver!
Okay so these vegan gooey fig muffins may be my yummiest creation yet 😋 but of course i didn’t measure anything 🙈 here’s what went down -> crunchy almond butter + tahini + mashed banana + pumpkin purée + coconut flour + maple syrup + baking soda + vegan choc chips + pecans + vanilla + almond milk. I have avocado toast almost every day, my kids love avocados (especially fresh guac), and there is pretty much only one place I will buy them anymore. 🥑 After years of disappointment and wasted money upon cutting into a soft fruit to see it was not ripe but brown, bruised, even moldy inside 🤢 I noticed I was always happy with my avos from Trader Joe’s. Their bags of 4 make it easy to get though before they go bad. They are almost always perfectly green inside. I just won’t buy them anywhere else anymore! Plus with avocados being #1
on the EWG.org clean fifteen list of pesticides in produce, I can save a little money and go with conventional. Although they have a great price on organic as well! Happy Friday!! I’m glad that it’s Friday, but knowing I have A LOT of studying to do this weekend, Friday just doesn’t feel as good as usual. 😖 Currently, I’m sipping on a GOLDEN ALMOND MILK LATTE and studying a little before work. I don’t drink as much caffeine as I used to in college so this cozy latte will be on repeat this weekend. 📚 I began to remove caffeine from my routine midway through college where I’d stop having it in the morning except for rare occasions and would only drink it to stay up late during exam study seshes. Now, I hardly drink coffee ever other than lattes to treat myself every now and then or those instances where I get minimal sleep. 😴
I avoid caffeine not for any major negative I feel it has, but just because I don’t feel like I need to rely on it to stay alert throughout the day. Just curious, does anyone else limit their caffeine consumption and if so, why? ☕️
