!😏 Eggplant Parmesan recipe below ⤵️ .
1 jar of marinara sauce
1 box eggplant patties from #TraderJoes
1 log of @belgioiosocheese
1 log of ground pork sausage [optional]
Grated Parmesan Cheese
Basil for garnish
1. Preheat oven to 425 degrees.
2. Pour enough marinara sauce to cover bottom of @lodgecastiron
skillet. Place one layer of frozen eggplant patties. Cover with fresh mozzarella slices. Sprinkle cooked sausage and Italian seasoning. Add another layer of sauce and repeat! Add grated Parmesan cheese to top layer before baking.
3. Bake in preheated oven for 30min. Keeping a watchful eye, broil the last couple of minutes until mozzarella is golden brown!
4. Remove from oven, garnish with basil and serve!
Meal planned for the week! Chicken salad for two days and multigrain wrap, maple turkey breast and cheese. Now to make my shakeo as my snack! I’m feeling pretty proud of myself! ❤️🙋🏻♀️

1 box @eatbanza

spiralized zucchini noodles (or one zucchini spiralized on your own)
1 cup green and purple kalamata olives
1 Persian cucumber
1 large red bell pepper
1 clove of garlic

1/3 cup extra virgin olive oil
Juice of 1 lemon
1.5 tsp dried Mediterranean oregano
1 clove of garlic, minced
Fresh black pepper
Himalayan pink salt

We went to Trader Joe’s and grabbed a few different things and we never got around to the Chicken Tikka Masala so I had it today! I sautéed some spinach to add something healthy and everything together was delicious! Happy Sunday!

Yesterday I was able to run some errands solo and drive for the first time in weeks since having surgery on my right foot! Felt so good even if it was mostly grocery shopping 😆 Treated myself to some fresh eucalyptus and this crispy wave plant from Trader Joe’s that is supposed to naturally purify the air!
One of the worst things to hear when we are #tryingtoloseweight
is that we can’t have something!! I absolutely love bagels but had pretty much given up on eating them as I pushed into my mid-40’s!! Don’t get me wrong, I still eat carbs because my body truly needs them to feel good and have energy! Plus I feel variety is the key to getting all the nutrients our body’s need! I just choose healthier carbs that don’t stick to my thighs!! The average bagel we get is about 300 calories and that doesn’t even include the toppings! Yikes!
Anyway, one of the most exciting things about health coaching is helping find solutions to foods that we have felt we couldn’t have in the past to reach our goals! This is a definite win for my #carblover

Mango Jicama Slaw spring rolls 💛 I didn’t use all of the dressing, which is actually quite spicy, and also mixed in some pink salt and powdered ginger. The rolls have slaw, mung bean noodles, and avocado 🥑 My dipping sauce was made with TJ’s Tahini, Raw Almond Butter (much smoother texture than the roasted), coconut aminos, honey, ginger, a drop of soy sauce, and a smidge of hot sauce 👌🏻 #ricepaperrocks

I had the distinct pleasure recently of hosting a tasting of Trader Joe's exclusive pinot noir. The bottles pictured are all $9.99 & all from California. The ranking at the end of the tasting is as follows: .
WINNER: Cotillion. Hailing from three different countries, this is the only 100% pinot out of the bunch. Ripe berries & just barely a hint of rose petals & earth with a dry, finish. .
SECOND: Caretaker. A decent wine, but lacking the complexity of Cotillion. Pleasing juicy berries with a bit of soil & soft tannins, but a flat finish. Not really worth the price. .
THIRD: Liberté. Boldest out of all, but supplemented with a percentage of syrah. The delicate floral qualities of a good pinot are just lost. You can skip this one.

! Crunchy Slaw with Chicken. 🥗 This might not be “new,” but it’s the first time I’ve tried it (thanks to seeing @traderjoesobsessed
‘s post) and I LOVE it! The crispy noodles and peanut dressing are perfect together. Love the crunch! And you get a lot of salad in here; it’s very filling. Yes, I’m totally raving about a grab-and-go salad, lol. This will definitely be a staple from now on. 😋 #happyweekend

Fire-Roasted Cheese Steaks
Consumers today are gravitating towards the taste of fire– charred, flamed, fire-roasted and smoked. We’re seeing “fire” used as a flavor in more and more products. Trader Joe’s, with its pulse on the consumer, delivers on this with its Fire Roasted Bell Peppers & Onions which you can find in the freezer section. Pair it with TJ’s Shaved Beef Steak which you can find in the fresh meat section and is nice and thin and takes only minutes to cook up. Add it to your favorite hoagie roll (we like Martin’s Hoagie rolls) with some shredded provolone cheese or whatever cheese your family prefers. While “fire-roasted”, it’s not spicy at all. If you want some extra spice, you can add sriracha or your favorite hot sauce. Serve it with #traderjoes
