Cauliflower Gnocchi ✨ I cant remember life before it. Truly obsessed. I usually will just toss in a pan with cooking spray and add in lots of veggies (broccoli, power greens, etc) and either chicken or veggie sausage and top with mozzarella and garlic salt. Also good with some meatballs topped with red sauce and cheese.
Meatless meatballs ✨ fell in love with these during my meatless month in September. The flavor is so good and the consistency is 💯. Will add to @banza
chickpea pasta with some veggies, or add to a bowl with veggies.
Riced cauliflower ✨ such a great substitute for rice. Will usually make as a stir fry with veggies + meat or with a side potstickers and top it with coconut aminos or general tso sauce. The flavor is a little interesting by itself (tastes like plain cauliflower 🤔), but good with sauce!
Superfood pilaf ✨ love this pilaf when I want to make a really quick dinner. It has quinoa, sweet potatoes, carrots and kale. Heats up quickly on a sauce pan. Will usually add a source of protein like chicken or veggie sausage.
Brown rice ✨ this microwaves in 3 minutes and comes out perfectly. Enough said.
Everything but the bagel seasoning ✨ the BEST seasoning. Tastes great on just about anything. I usually use on eggs, toast, roasted veggies, etc.

Honestly bought this because I wanted chocolate almond milk but this was the only thing left at my TJs 🤷🏼♀️ I’m not sure I can tell any difference between this and straight almond milk but it’s good regardless! I’ve used it to make chocolate chia seed pudding and even put some in my morning coffee. ☕️
I hear all the time I don’t have time to eat healthy or a lot of people think I magically spend all this time in the kitchen . You guys I DONT ! if I spent hours in the kitchen my 3 year old twins would wreck my house - like most moms we are all busy and a lot of us work on the side as well. This leaves us with little time to make this elaborate meals BUT eating healthy and fast can be done !! .
Here are my top tips and tricks to eating healthy , fast, colorful meals ...
1. Set aside a day to prep your protein and veggies for the week. The Instantpot was a game changer for me !
I will cook shredded chicken in the instant pot on Sunday and usually Thursdays. It takes hardly anytime.
2. Purchase steamable bags of veggies that you can make in under 5 minutes .
3. Make a list of your meals and tape them on the fridge so you have a plan in place of what you are going to eat .
4. For my macro trackers - gamechanger right here: Pre Log what you are eating the night before or morning of so you can see where you need to add in or take out things . This will save so much time and makes macro tracking doable and successful and stress free.
5. Keep staples that you like on hand for quick meals - for me I always have Joseph lavish bread , shredded cheese, frozen green beans and broccoli, tomatoes , berries, deli turkey, cottage cheese , corn tortillas, salsa, bolthouse dressing and Hughes BBQ sauce on hand . That way if I am out of chicken or don’t have anything planned I can throw something together with these staples. .
Today my lunch was made in under 5 minutes because I already had steamed the butternut squash , had celery cut up and then filled the celery with spinach and artichoke dip and my chicken was already made from a few days ago . All the veggies and dip are from @traderjoes
. See it was quick , easy and I had prepped ahead and had a taste of the rainbow . If I can do it you can do it !!

butternut squash pizza crust for dinner! I added tomato sauce, mozzarella cheese, ricotta cheese, broccoli, and spinach (topped with Everything but the Bagel seasoning after it was done).
I thought this was so bomb! I gave Steve a couple slices and he described it as ‘a desert and an entree at the same time as it was kinda sweet’, and said it was very tasty! I don’t think this will be everyone’s cup of tea, and you definitely know you’re eating a butternut squash crust and not actual pizza crust, but if you’re a fan of cauliflower crust pizza like I am, you should give this a try!

on my walk home (it’s so close to my apartment), but opted to save some $ and make a quick dinner instead: spaghetti squash, rotisserie chicken🍗, green beans, carrots🥕, and avocado🥑! Attempted to make pumpkin tahini chocolate chip cookies afterwards, but the first batch ended up on the floor (rip) and the second batch didn’t turn out so hot either. Life is finally getting back to normal after a week off due to a hurricane but now we’re in overdrive trying to make up time and work from last week 😭 In other news today it’s the first day it’s felt like fall here in Florida and I could not be happier with this weather 🙌🏽🎃
New favorite breakfast! Sweet potato toast with organic pumpkin, cinnamon, and pumpkin spice 😋 definitely can mix some almond butter or sunflower butter with the pumpkin and drizzle honey on top as well. .
I cut the sweet potato in half-inch thick strips, long ways. I lathered them up with coconut oil and popped them in the toaster until the sweet potatoes were light brown. .
Mix some pumpkin and nut butter in a bowl and spread it onto the sweet potato toast, garnish it with cinnamon and honey/ agave drizzle and enjoy! .

I consider this pasta sauce the healthiest option out of all the sauces at @traderjoes.
Why? No citric acid, soybean oil, canola oil or cheese. The ingredients are simple and clean overall. It also has less sodium than other products like their Tomato Basil Marinara. Unfortunately, it does have sugar which is hidden in EVERYTHING. Try mixing 1/4c and with a bit of the pasta water and lots of seasoning (fresh herbs, garlic powder, etc). Y'ALL!!! Let me share my experience with my pup and CBD... She's 11 years old and has been moving pretty slow lately especially since she had an infection that almost killed her this summer.. See has pretty bad arthritis in her hips and hasn't been able to jump up on our bed without Nick or myself helping her in months.. She was spending her days laying around not being very active.
Since I have started her on CBD oil for pups she is literally a puppy again !!
