Sanghri is a fruit that is found on the Khejri tree.
It is mixed with Kair and a delicious sabzi is prepared.
The Khejri tree is considered to be a very important plant of Western Rajasthan.
In earlier days when there was a scarcity of water in Rajasthan, this tree was valued a lot as very little water is required to grow it , they could use its fruit(Sanghri) in their food, the leaves could be used to feed the cattle. The milk giving animals would eat the leaves and produce milk. This would complete the demand of milk. The animals could also be used to prepare non vegetarian dishes. The decayed leaves could be used as fertilisers.
This is why this tree is called the lifeline of People
In western Rajasthan.
Recipe of kair Sanghri -
2 katori dried kair and Sanghri soaked overnight and boiled.
Red chilli powder
Heat oil in a kadhai. Add jeera, Haldi, red chilli, coriander, amchoor, salt roast it.
Add Dhahi mix well
Add boiled kair and Sanghri mix well and cook till oil separates. Add amchoor and mix it serve with bajare ki roti. Happy eating!

送上奶奶包"嫩餅"快而準嘅手法，大家睇咗當食咗啦 - 出面搵唔到架！ 因咁麻煩屋企都好少有得食架！
