¿Hicieron la masa sableé? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Les cuento que luego de haberle dado a la masa, unas merecidas vacaciones en la nevera, con la finalidad de resaltar aún más, sus propiedades organolépticas, decidí hacer una variación del quiche que tuviese un agradable dulzor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ He aquí el paso a paso; ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Puse a caramelizar la cebolla en julianas y al estar está en su punto, le agregue unas cuantas pasas, removí por un par de minutos e incorpore al piso de la tartaleta. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Luego, sofreí tocino, jamón ahumado, morcilla y reserve. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Prepare crema bechamel, le agregue un huevo (al estar lista) y combine con el sofrito anterior para finalmente, incorporar esta mezcla a la base de la tartaleta y horneé a fuego medio durante 40min. En cuanto a las cantidades, estas ya dependerían del tamaño del molde que usen para la tartaleta. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ TIPS ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Cuando llegue el momento de batir los huevos, separen las claras de las yemas y llévenlas a punto de nieve. A continuación, deberán batir las yemas e incorporarlas a las claras a punta de nieve con movimientos suaves y envolventes para así, tener una increíble quiche de textura suave y esponjosa. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴La proporción de huevo y leche (o crema) es importante y determinara la capacidad del quiche de hincharse una vez este en el horno. Como recomendación, utilicen un huevo por cada 60g de leche/crema. Por otra parte, si desean un relleno un tanto más consistente, sustituyan la mitad de la leche por nata. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Otro aspecto a tener en cuenta es la temperatura del horno, este deberá estar entre los 160º y 180º ya que si hornean el quiche a temperaturas aún más altas, este se inflara rápidamente y enseguida perderá volumen (me di cuenta al quinto intento), adquiriendo una consistencia “gomosa”. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🍴Por último y no menos importante, les aconsejo que no coloquen el quiche en los estantes superiores del horno ya que si lo hacen, este les quedara cocido en el exterior y crudo en el centro. Utilicen el estante del medio y horneen durante 40/45 min. Su quiche estará listo en cuanto la corteza haya adquirido un tono dorado y el centro tenga una consistencia semi sólida.
