1- put rice paper roll vertically in water, for a few seconds
2- Think fresh, crispy with crunchy vegtables
3- put small amounts of cooked rice vermicelli at bottom of rice paper
4- Add your combo in small amounts
5- Fold over, flatten sides, and bring to the centre, like an envelop
6- Roll and serve with favourite dipping sauce: nuoc cham? hoy sin ? Soy, lemon chilli? Soy, ginger, chilli & shallot ? Peanut sauce?

7- Use herbs for extra flavour: coriander? vietnamese mint? thai basil?
