October is National Seafood Month, so let’s talk seafood! 🐟 What are your family’s favorite seafood meals? How did you introduce seafood to your kids? 🐟 I’m always looking for more seafood ideas!
One of our family’s favorite seafood recipes is from my friend and fellow dietitian, @betsyramirez
- her Tuna Avocado Salad. 🐟 🥑🐟 It is a SUPER quick lunch or dinner! We always have tuna pouches and avocado on hand, so it is one of my go-to recipes. 🐟 Check out the single serving size recipe at betsyramirez.com. For a family dinner, I “family-sized” the recipe this way:
One family size pouch of chunk light tuna in water
2 mashed avocados
1 T. Of lemon juice
1/2 - 3/4 cup chopped red onion
1/2 - 3/4 cup chopped cucumber
S&p to taste
Mix all of the ingredient together. Serve over spinach or other leafy greens.
For us, instead of the spinach, we give the kids extra cucumber.
Serve with a side of whole wheat toast and/or sweet potato fries (from frozen foods aisle).🐟 🐟 With the health benefits of seafood (brain health, heart health), it is recommended to eat #seafood2xwk
