The most important step in preparation is the time of marinating that should be not less than 24 hours.
The marinade comprises of loads of garlic, yogurt, ginger,lemon juice,bay leaves, cinnamon, cloves, cardamom, nutmeg, grounded coriander, paprika and vinegar.
The sandwich has distinctive varieties in various cooking and known by various names. In the Greek food, the prominent Shawarma variety is called “gyros,” while in Armenian cooking, the dish is called “tarna.”
In Turkey it is known as döner kebab, which signify “turning.” In Iraq, the dish is called “guss.” However it is called, the preparation is almost the same, Emphasizing the word “almost” because every country or region adds its secret ingredient that makes its “ Shawarma” tastes better than the others. Frankly saying with all due respect to all the best shawarma i had ever eaten was in Damascus many many years ago.
