STIR-FRIED PEANUT SESAME NOODLES
Serves 2-3 people
200g dry rice noodles
¼ cup leeks, sliced
½ medium red onion, sliced into strips
½ cup sliced bell peppers, sliced into strips*
1 tbsp canola oil
200 g tofu, pan fried and sliced into strips (optional)*
½ cup purple cabbage (optional)*
3 tbsp sesame oil
Cilantro for topping
Sesame seeds *The tofu and veggies are really up to you! You can even use carrots, bean sprouts, and basically whatever you have available!
¾ cup water
2 tsp tamarind paste (optional)
2 tbsp peanut butter (I used slightly salted and sweetened peanut butter)
3 cloves garlic, minced
2 tbsp maple syrup
4 tbsp soy sauce
1 tsp sriracha (optional)
Cook the rice noodles until chewy. Do not overcook. Set aside.
While the noodles are cooking, place all the sauce ingredients into a sauce pan and cook on medium heat until smooth and well incorporated. Set aside.
In a large pan, heat the canola oil. Saute the onions, leeks, and bell peppers.
Add in the tofu and cabbage (if using). Sauté until tender.
Add in the cooked noodles. Pour in the sauce while mixing the noodles.
Cook for another 3-5 minutes on medium to high heat until the noodles have absorbed the sauce.
Turn off heat. Add in the sesame oil. Mix well and top with sesame seeds and cilantro, if using. Enjoy while hot!

I am just beginning my journey to join that elite group of athletes, a little over 4,000, that have completed the Majors, but I look forward to my journey with gratitude and anticipation. I am looking forward to learning and growing as an athlete, to traveling the world with my family and meeting many more beautiful souls on my journey. 1 down, 5 to go! 😊

2 cups organic white flour
200ml boiling water
pinch of salt
2 tbsp organic toasted sesame oil
1 tbsp minced ginger
1 chopped onion
1 1/2 cups chopped mushrooms
1 1/2 cups finely shredded cabbage
1 cup finely shredded carrot
1/2 cup finely shredded Chinese chives
1/2 cup cilantro
1/2 tsp white pepper
2 tbsp shaoxing wine or dry sherry
2 tbsp soy sauce
1 tsp sugar
1 tsp salt
In a stand mixer, mix the flour, salt and boiling water until you have a rough ball shape. Dust your work surface with flour. Remove from the bowl and knead for 10 minutes until smooth. Divide the dough into two and rest for 20 minutes.
Divide each piece of rested dough into 16 even-sized pieces. Roll each piece of dough into a small ball and then flatten it. Dust your working surface again. Take one piece of dough and press it to a round disc. Rotate the wrapper when moving your rolling pin. Repeat the process, rotate the wrapper-roll and rotate the wrapper-roll. The wrappers will have thicker center and thinner edges naturally.
Make the filling; In a large skillet over medium high heat, add 3 tablespoons oil and add the ginger and onions. Cook until fragrant and onions until translucent. Add the chopped mushrooms and stir-fry for another 3-5 minutes, until the mushrooms are tender and any liquid released by the mushrooms has cooked off.
Add the cabbage, carrots, and stir-fry for another 2 minutes, until the veggies are tender and all the liquid released has been cooked off. Transfer the vegetable mixture to a large mixing bowl and allow to cool. Then add the cilantro, chives, white pepper, sesame oil, shaoxing wine, soy sauce, salt, sugar and mix well.

Sorry for the delay in posting. Since we left Nice by ship, there has been very little WiFi available. The cycling has been spectacular though. Until today. There is a large storm in the area and our ship had to place us in the harbor in Bastia (which was not in the plan) for two days to keep us and the ship safe. Buckets of rain today so the crew on the ship is doing their best to keep us entertained. Our bikes up on the top deck are getting soaked. A little extra rest isn’t bad though, 5 days in a row riding has made me a leeeeeetle sore. We will see what tomorrow brings!
So many interesting people on this trip from all places in life. Extra time today to get to know them better.

I’ve had a few months of feeling really great so I guess it was inevitable that one day I would get my ass kicked again, eh?
Something I saw triggered me and then led to a spiraling of events that crippled me in moments. I cried a lot yesterday. I felt anxious. I felt rapid breathing taking over my body. I felt a desire to retreat and shut down. I felt I was stripped of my power (momentarily) and felt despair and helpless. I was scared. I had my weekly meeting with my therapist and then I had a follow up that evening. I finally collapsed into bed around midnight after doing everything I could to take back some of the power I know was within me.
Here’s the deal ... Many months ago, a day like yesterday would have derailed me. Having to relive trauma and justify that I am actually a very good human. Standing up for yourself is NOT easy. But silence is deadly. Speaking, owning and standing in your truth even when people you love turn their backs is not easy. But I’m an endurance athlete, mountain climber and a fucking MOM. I don’t do easy. Especially when I know it’s for the greater good.
I had a band of angels around me yesterday. Heavenly ones but earth ones as well. Friends that will hold space for you to feel and express and cry is precious. When they love you harder after, that is just what life is about. The ones who believe you and in you when you start to crumble.
I am a good human was my mantra by the end of the night and it felt good knowing when the thrashing is against me, I can stand in that honest truth. Look anxiety is a fucking bitch. Trauma is a bitch. We all feel and experience and process these things differently. Here is a simple trick I have learned....
Sometimes in these moments we have to remind ourselves that the ONLY thing we can control and do in these situations is breathe. In and Out. Placing your hand on your belly and heart, eyes closed. All we have to do is breathe through the anxiety. It’s hard. Life is sometimes really hard. Sometimes it is easy. But we all feel these things. So the more we can share and be there for each other the stronger we can become❤️

My rocky relationship with running... We took some time apart so I could work on my issues. And now 2 months into rebuilding our relationship I still struggle with getting back to where we were before it fell apart. As with any relationship, rebuilding trust is the toughest part.
The most common words I hear from people are: “you must be so HAPPY to be back to running!!” I smile, nod and agree even though it’s far from the truth. Honestly, my disappointing runs far outnumber the okay ones. This leads to me dreading them - wishing to avoid the fear, pain, and frustration caused by the thing that used to bring me the most joy.
Today, like most days, I struggled to get myself out the door. But then suddenly today was different. Within the first few steps it finally felt...RIGHT. I felt smooth, comfortable, and enjoyed every moment. I don’t know what flipped this switch but I’m so damn happy it’s clicked!
So now I finally feel ready to put my fears aside and dive back in. Rebuilding my running fitness is going to take some time but now I’m excited to work on it because I’ve made it over the first major hurdle. Welcome back my love.
I’m not much of a material girl.
I don’t wear much makeup, and when I do, I do this weird thing bc I don’t feel like myself.
I have tons of funny accents.
I spend a lot of time writing.
I love to create.
I most likely drink way too much coffee.
I go outside as often as I can, and love rolling around in the grass laughing at absolutely nothing.
I chose to go vegan for my health at the start, but now I do it for this planet and the animals who can’t speak.
I love to make those closest to me feel like they deserve the world, bc they do.
I am selective with how I spend my time, and specifically whom I spend it with.
I care about a lot of people, but keep my circle tight.
I can be rigid, but most times I’m soft.
I prefer to flow, as much as I try to control.
I’m both wild, and quiet.
I can make myself laugh, often.
I give way more than I like to receive.
I seek forgiveness before I even think of revenge.
And I pray hard before making any big decision.
Being this woman is so damn natural to me.
And by doing this little ramble, I hope to encourage you to embrace all that you are. 💜-

This water fast has helped me to heal my leaky gut and significantly improved my quality of life. Prior to 2015, I have been battling with serious health issues that the conventional medicine was not able to treat.
