pumpkin chia pudding | yooooo also a breakfast fave. I wasn’t too fond of chia pudding until one day I decided to mix in pumpkin purée with coconut milk... GAME CHANGER. no added sweeteners!! the squash we get here is so naturally sweet that even the paleo pumpkin pie I made yesterday tasted a little too sweet for me. 🙊 but I love chia pudding because I can prep it the night before then add the toppings in the morning - super easy for when I don’t have a lot of time!
pumpkin chia pudding (coconut milk, chia seeds, homemade pumpkin purée, spices) topped with an apple sautéed with cloves + cinnamon, pumpkin seeds, cashews, and peanut butter
As I set up for our final LJK class for this year (!) wanted to share this super cozy, cabin friendly brekkie
Soak whole oat groats overnight.
Add a pinch of pie spice per person, bit of oil in a pot over medium heat and toast spices.
Add fresh ginger slivers, raisins, dates, pinch salt, groats and simmer in 1/2 water, 1/2 mylk to generously cover for 20-25 minutes.
Add rinsed quinoa, amaranth, millet, additional mylk to cover and simmer for another 20sh.
Adjust for salt, add toasty toppings and en joy^^

Tortilla de porotos! 😍 Una opción genial para todas las comidas, tapas de sandwich o para comer solo tipo pancito. Es sin tacc y OBVIO que RIFABA (rico, fácil y barato, lo acabo de inventar, les gusta?). Miren lo simple que es!
🦓 Dejamos en remojo porotos colorados crudos durante 8 horas. 🦓 Enjuagamos y procesamos con poquita agua como para que quede una crema granulada bien espesa.
🦓 Condimentamos. Yo usé sal marina y cebolla en polvo.
🦓 Esparcimos la mezcla en sartén caliente apenas aceitada. Yo lo cociné a fuego medio bajo y le dí un último golpe a fuego alto para dorar antes de dar vuelta.
🦓 Damos vuelta y dejamos hasta que se dore del otro lado.
🦓 Listo! Lo servís con lo que te guste. En la foto, con queso de girasol, rúcula y tomate para un regio brunch a mitad de semana ❤ (agarrá la pala, samurai)

Makes Two Green Smoothie Bowls
2 handfuls Kale
1.5 frozen banana
1/2 frozen avocado
2 tsp pumpkin spice matcha @amodatea
1 tsp spirulina @organikahealth
1 serving any vanilla protein (I used @coastprotein

Healthier Key Lime Bars .
~~~ Ingredients ~~~ .
● ¾ cup almond flour
● 3 tablespoons coconut oil
● 3 tablespoons maple syrup .
● ½ teaspoon ground cinnamon
● 1 pinch salt
● 14 oz cans of coconut milk, chilled overnight
● ½ cup lime juice, from about 2 limes
● ⅓ cup maple syrup
● 2 limes, zested
~~~ Preparation ~~~ .
1- Line an 8-inch (20 cm) square baking dish with parchment paper to hang over the edges.
2- Make the crust: in a medium bowl, combine the almond flour, coconut oil, maple syrup, cinnamon, and salt. Mix with a spatula until smooth.
3- Transfer the crust to the baking dish. Use a spatula to smooth the crust into a thin, even layer covering the bottom of the pan. Set aside.
4- Make the filling: open the cans of coconut milk and use a spoon to scoop the thick cream at the top of the can into a medium bowl. Set aside the remaining liquid for another use, such as in smoothies, soups, or sauces.
5- Beat the coconut cream with a hand mixer until very fluffy, about 5 minutes.
6- Add the lime juice and maple syrup. Continue to beat until smooth and fluffy, about 2 minutes.
7- Pour the filling over the crust and use a spatula to smooth out the top.
8- Top with the lime zest.
9- Freeze for at least 2 hours, until the filling has set.
10- Grab the parchment on both sides and lift the frozen bar from the baking dish. You may need to use a knife to release the edges or turn the dish upside down on a cutting board and tap on the bottom to release the block.
11- Quickly cut the block into 16 2-inch (5-cm) square bars.

. Growing up, I was so into the Quaker oats strawberries and cream processed oatmeal packs. I would eat at least 4 packs a day 😲. This homemade oatmeal was so easy and delicious to make. I used pumpkin spice powder to give it that Autumn inspired flavor 🎃
