Made these bagel bites this morning using @holistically_thriving ‘s GF Vegan bagel recipe which calls for just a few ingredients...simple and fun to make...the recipe is on her page. They’re delicious right out of the oven. pumpkin chia pudding | yooooo also a breakfast fave. I wasn’t too fond of chia pudding until one day I decided to mix in pumpkin purée with coconut milk... GAME CHANGER. no added sweeteners!! the squash we get here is so naturally sweet that even the paleo pumpkin pie I made yesterday tasted a little too sweet for me. 🙊 but I love chia pudding because I can prep it the night before then add the toppings in the morning - super easy for when I don’t have a lot of time! pumpkin chia pudding (coconut milk, chia seeds, homemade pumpkin purée, spices) topped with an apple sautéed with cloves + cinnamon, pumpkin seeds, cashews, and peanut butter
Vegan French Toast 🍞 w/apple 🍎 - I was thinking about French toast last night and really want to have it for breakfast 😂. Although weather is cool and I want something hot as porridge does, French toast is really telling me to eat her 😋. Nevermind, I will be having oats later for my second breakkie when I reached office 📝. - - This french toast is served hot and soft❤️ . French toast: Mixed @nutiva Chia seeds(ground the seeds are preferred)with almond milk, cinnamon, nutmeg, maple syrup and 1 scoop of @myproteinhk Vegan protein blend(optional, add if you need extra protein). Stir well and let sit for 5mins. Soak each side of the sliced bread for 10-20sec. Add coconut oil before cooking the breads. Use Low-Medium heat to cook until both sides are slightly brown. . Apple 🍎: chopped and sliced into cubes and thins, Caramelised them with cinnamon. Place between the toast. SESAME CAULIFLOWER 🤤 1 small Cauliflower 1/3cup flour (can be gf) 1/3cup water Pinch of salt and pepper Pinch of garlic and onion powder Mix and coat batter over cauliflower, place in oven at 180 degrees and spray with a little olive oil. Cook for 40minutes or until golden. Sauce; 1clove of garlic finely chopped Same size piece of ginger grated 2tbs brown sugar or maple syrup 1tbs rice wine vinegar 1tsp toasted sesame oil 1/2 cup veggie stock (mix everything together add to a pan bring to a boil add in 1tsp cornflour mixed with 1tbs water put it into sauce turn the heat down to low until reaches desired thickness. Coat cauliflower) . . . As I set up for our final LJK class for this year (!) wanted to share this super cozy, cabin friendly brekkie Super Oats💫 Soak whole oat groats overnight. Add a pinch of pie spice per person, bit of oil in a pot over medium heat and toast spices. Add fresh ginger slivers, raisins, dates, pinch salt, groats and simmer in 1/2 water, 1/2 mylk to generously cover for 20-25 minutes. Add rinsed quinoa, amaranth, millet, additional mylk to cover and simmer for another 20sh. I always enjoy a glass of beet smoothie no matter in which season.🌹🍀🍁⛄ It’s very simple to make, and super healthy. 😸What I like to use is beetroot, chopped ginger, an apple and a banana. Sometimes I add some greens as well. 🌱 Here in Taiwan, I had a very good rest.😆 Maybe it’s because the sun rises earlier, we somehow get up earlier than we used to in Belgium. 😉Strange, we have no jet lag this time. We like to start our day early, as it gives us a feeling that we are productive. PORTABLE BREAKFASTS Every morning before school I blend a smoothie bowl to put in a old @mayversfood nut butter jar and top it with the usual toppings and eat it on the bus! It’s made me heaps more organised so I can do more stuff rather then have breakfast at home! Also because I get to sleep in longer 🥳 This has a chia pudding using @botanikablends chocolate hazelnut protein (new obsession), coconut, the sexiest strawbs Eva (@joeydoesfood ) , pepitas, almonds, and a fat blob of the love of my life; @99th_monkey almond butter 🤪🤪🤪
Healthier Key Lime Bars . ~~~ Ingredients ~~~ . CRUST . ● ¾ cup almond flour ● 3 tablespoons coconut oil ● 3 tablespoons maple syrup . ● ½ teaspoon ground cinnamon ● 1 pinch salt FILLING . . ● 14 oz cans of coconut milk, chilled overnight ● ½ cup lime juice, from about 2 limes ● ⅓ cup maple syrup ● 2 limes, zested . ~~~ Preparation ~~~ . 1- Line an 8-inch (20 cm) square baking dish with parchment paper to hang over the edges. 2- Make the crust: in a medium bowl, combine the almond flour, coconut oil, maple syrup, cinnamon, and salt. Mix with a spatula until smooth. 3- Transfer the crust to the baking dish. Use a spatula to smooth the crust into a thin, even layer covering the bottom of the pan. Set aside. 4- Make the filling: open the cans of coconut milk and use a spoon to scoop the thick cream at the top of the can into a medium bowl. Set aside the remaining liquid for another use, such as in smoothies, soups, or sauces. 5- Beat the coconut cream with a hand mixer until very fluffy, about 5 minutes. 6- Add the lime juice and maple syrup. Continue to beat until smooth and fluffy, about 2 minutes. 7- Pour the filling over the crust and use a spatula to smooth out the top. 8- Top with the lime zest. 9- Freeze for at least 2 hours, until the filling has set. 10- Grab the parchment on both sides and lift the frozen bar from the baking dish. You may need to use a knife to release the edges or turn the dish upside down on a cutting board and tap on the bottom to release the block. 11- Quickly cut the block into 16 2-inch (5-cm) square bars. I was inspired to make oatmeal for Alaina after watching a recent What I Eat In A Day from @urhealthnut . Growing up, I was so into the Quaker oats strawberries and cream processed oatmeal packs. I would eat at least 4 packs a day 😲. This homemade oatmeal was so easy and delicious to make. I used pumpkin spice powder to give it that Autumn inspired flavor 🎃
