I’ve been switching up my usual oatmeal for breakfast quite a lot recently and having chia pudding instead because variety sure is the spice of life! It’s so easy to make and super versatile both in terms of flavour and toppings. I’ve just shared the recipe for this apple pie coconut chia pudding on my blog. It’s refreshing and super smooth, and the apples add a touch of fall-inspired cosiness! I also added a drizzle of PB and some cashews for extra healthy fats. The link is in my stories and bio 😊

I have another busy day and Friday and weekend ahead of me (actually, Tuesdays and Mondays feel more like the weekend in my routine because we have our essays set on Wednesdays and I try to get most of the work done over the actual weekend haha). Guten Morgen ihr hübschen 🤗 neue Woche neues Glück oder? Also ich beginne die Woche mit nicht so tollen Themen. Meine Erkältung mit Magen-Darm vor 3 Wochen will nicht enden & somit war ich heute beim doc. Habe inzwischen Magenschmerzen & Zahnschmerzen. Bei dem Zahn der schmerzt handelt es sich tatsächlich um den, der mit den Nerven zum Darm verknüpft ist. Somit Spar ich mir den Zahnarzt & hoffe auf Heilung 🙏🏼 Mittwoch wird Blut abgenommen. Leider geht das nicht sofort, was ich äußerst komisch finde. Gerade wenn es akut ist 😏... naja nachher hole ich erstmal meine pflanzlichen Helfer & vielleicht tut sich ja was. .
Diesen Brei aus geriebenen Apfel, Zitrone & flohsamschalen habe ich schon mal vorgestellt & ist absolut gut wenn man sich schonend ernähren soll. Ansonsten lt Ärztin gekochtes Gemüse & Zwieback 🤓 das kriege ich hin 👍🏼

I lift weights 5 times a week, but you would have to pay me to get me to stay on a cardio machine for longer than a 5-10 minute warmup 🤣😅. Starting my day with a good workout is one of my favourite ways to stay focused and productive! I also love going for walks outdoors, especially if I take my camera with me and go somewhere picturesque. In other news, here are some buckwheat pancakes I made a few days ago and served with fruit, coconut yoghurt and some peanut butter. It may not be pancake Sunday, but to be honest I’m up for pancakes on any way of the week! 🌿

Tonight, I picked the savory stuffed turk’y and accompanied it with purple potatoes, asparagus, broccoli and red onions with VegNature seasonned whipped butter and a demi-glace mushrooms and vegetables sauce !

J'aime beaucoup des produits de Gardein. Ils sont pratiques, délicieux et rapides, donc pour un repas de fête imprévu ou que l'on a oublié... ;-) Ils s'imposent !
Ce soir, j'ai choisi les paupiettes et je les ai accompagnées de pommes de terre mauves, d'asperges, brocolis et d'oignons rouges avec le beurre VegNature fouetté aux épices et une sauce demi-glace aux champignons et légumes !

My active, fit lifestyle (training 2 hours a day, 6 days a week, running around 50 miles and lifting heavy) is a BI-PRODUCT of the health I consume. I switched to a plant based diet because I was interested in health, but BROKE 😂 I'd left the world of desks, finance and real estate, so how could I stay healthy whilst saving money? And I began to feel so amazing, filling myself with plants, spending more time in nature and less time sitting at a desk, watching more inspiring content rather than shit TV... that I began to move more naturally and feel epic. I basically spontaneously started running/lifting because my 'diet' made me feel so good. Just one small change in what you consume/do on the daily can be a catalyst for MASSIVE change.
Why would I miss meat when bananas, nuts & peanuts, big bowls of rice/stir fry/pasta/sweet potatoes, smoothies w/ protein powder and greens TASTE BETTER than meat, make me feel incredible and support an awesome lifestyle. 🌱
If I really missed It that much, I'd just eat the vegan version (say for instance, southern fried tofu or a veggie hot dog) and even though that is still healthier than the meat version, it still isn't health promoting. So why would I go even worse than that and eat the meat version?
And Sure, someone could sit next to me on the tube with a steak burrito or a bag of KFC and I can see where the appeal is. I bet it tastes good, I get it (mainly because of the plant foods/spices added to the meat 😂) but is it worth me feeling crap? Is there any point in it? Do I NEED it? Is it even that good or are we just over rating it based on the fact it's advertised in front of us or our friends also like it? Maybe even do we consume it because we are a 'weird vegan' if we don't? Is it Worth an environmental footprint? Worth killing an animal? Nope.
I'm not just 'fine' with my fruits, veggies, nuts seeds and grains, I'm AWESOME.

Chickpea ‘tuna’ mayo & jacket potato. >
Chickpea ‘tuna’ is one of my favourite meals to make. All you need is a tin of chickpeas, vegan mayonnaise, red onion, sweet corn, turmeric powder, salt and pepper.
Instructions: Firstly bake a potato and prepare your salad. Then drain the chickpeas and mash them. Chop the red onion. Add as much vegan mayonnaise to the mashed chickpeas as you wish, plus the sweet corn and chopped red onion. Sprinkle a small amount of turmeric in and season with salt and pepper. Top the jacket potato (I’ve used sweet potato) with the mix and serve with a side salad. 😋

Happy Monday 🎉 for most people Monday means the start of their working week but for me it’s actually my allotted day off that I give myself each week as I have uni Tues-Fri and I work weekends 🤗 having days off is just as important as working hard! That said I’m deffo taking today to do some uni work as I’m really behind 😂 regardless, what better way to start the day than with some porridge amirite?
SWEET POTATO PIE BARS😁😁😁. INGREDIENTS
For the Filling:
4 cups Sweet Potato, peeled & diced (about 2 medium)
½ cup Unsweetened Non-Dairy Milk (I used Soy)
½ cup Maple Syrup
3 tbsp Arrowroot Powder*
1 tbsp Pumpkin Pie Spice
1 tsp Vanilla Extract
Pinch of Salt
For the Crust:
1 cup Pecans
1 cup Rolled Oats
2 tbsp Flax + 5 tbsp Filtered Water
3/4 tsp Salt
Preheat the Oven to 350F. Add the diced Sweet Potatoes to a Vegetable Steamer or a Pot + Colander combination with 3″ of water. Cover and steam for 15 minutes, or until fork tender.
In the meantime, prepare the base layer for the Bars. Mix 2 tbsp of Ground Flax with 5 tbsp of Filtered Water in a small bowl and set aside to let thicken. Add the Pecans, Rolled Oats, and Salt to a Food Processor and process until a fine crumble forms.
Once the Flax Egg has thickened, add it to the Pecan and Oat mixture and pulse until well combined; the mixture should form a sticky “dough.” Press the dough into a greased or lined 9×9″ baking tray; I like to use a spatula to make sure it is really packed down and even. Quickly rinse out the Food Processor, then return it to its base.
Add the Steamed Sweet Potato to the Food Processor with the remaining ingredients, and process until thick and smooth. Spread this mixture over top of the Pecan and Oat crumble, using a spatula again to even out the top.
Place the baking tin in the oven and bake for 30-35 minutes; let cool for at least 30 minutes before removing from the pan and slicing. Top as desired (I like to serve mine with some Coco Whip and a Pecan), and store leftovers in the fridge for up to one week.

I am fearful; of losing those I love the most before I am ready - though I know now that I never will be. My heart aches at the possibilities, and tears stream uncontrollably from my eyes. What, to me, I feel is even more petrifying is the distance between us no matter how large or small and the inability to accept farewell.
I am yet to lose someone I love and for that I am ever thankful, but I know beyond a shadow of a doubt that the experience will sweep me with the force of the ocean, from the cliff which I believed was safety into the unforgiving swell below.
I will never be prepared, and it haunts my nightmares and dreams alike.
