- 3/4 cup Coconut Whisk Pancake Mix⠀⠀⠀⠀⠀⠀⠀⠀⠀

- 1/2 cup fresh blueberries and strawberries, rinsed and diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
powdered sugar, jam and/ or syrup, for topping/dipping⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Heat oven to 350°F. Lightly grease mini muffin pan.⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a medium bowl, whisk together pancake mix. Batter will be slightly lumpy. Spoon 1 heaping tablespoon into each mini muffin pan.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Top pancake batter with 3-4 berries, adding a variety to each.⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Bake pancake bites for 12-14 minutes,until lightly browned. Cool in pan for 5 minutes. Remove and sprinkle with powdered sugar. Dip bites in warm jam or syrup.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Blue Monday's at Yo Sushi 🤤 My mum had the tofu katsu curry and a chocolate pot and I had the mushroom burger, veggie noodles, pumpkin katsu, tofu pocket type things, whatever that aubergine dish is, and a chocolate pot 🙃 All delicious but needed way more 🙃 What's your favourite dish? Mine used to be the tofu katsu curry but it's been pretty bad the last few times I've been, and the tofu was a really gross texture when my mum had it yesterday 🤷♀️
🌿2nd Chances w/ CBD🌿 The month of June has flown by incredibly fast. A big part of that I believe is due to having so little migraines this month. Days were not dragged out by the pains of a migraine but were instead busy and full of life. I was able to enjoy daily activities more as I was not being distracted with trying to manage symptoms. For the first time in forever, I felt the shackles of chronic migraines falling off piece by piece.
For the last 25 Days I have only experienced 3 migraines and 3 headaches (2 of which were half days). This is something I haven’t experienced since I was a child before my migraines started at 10 years old. I feel renewed and alive. The inflammation in my body has reduced significantly between the CBD treatment with Natural Recovery Greens, a plant-based diet, and running/jogging everyday. It really has become a game changer in the truest sense of the word. The inflammation has been on a steady decline. The pain in my joints, knots in my neck, and my migraines seem to slowly dissipating over time. My weight has stayed at 153 lbs, however, as my running increases over time, this will begin to drop naturally as a deficit in calories builds. I don’t count calories but rather just listen to my body and eat a whole plant-based diet while following my own diet rules for Phase 2. It will be interesting to see how my weight responds during phase 3. Recovery after runs has also been magnificent as the time it takes to repair is significantly shorter. This makes running every day a breeze! It is my hope that I can get back into my pre-pregnancy days when I was running long miles every day. And eventually get into Ultras 🏃
Overall, I am over joyed with my results! I have come a long way in my journey with migraines and have learned a lot. The biggest thing I have learned so far is that plants are truly magick ✨This diet and these supplements have been two of the best choices I have made in awhile. I am so pleased with the tranformation that has been happening to my body. It is something worth celebrating and sharing as this experience has been life changing. 2 cups unsalted vegetable stock⠀
1 cup vegan coconut cream pasta sauce
¼ cup vegan sunflower-hemp Parmesan
Black pepper, to taste⠀
Fresh parsley, chopped⠀
1. In large, flat-bottomed skillet, bring vegetable stock to boil. Once boiling, whisk in cream sauce.⠀
2. Add pasta, cover and reduce heat to medium-low. Continue cooking pasta according to box directions.⠀
3. Remove from heat and mix in vegan Parmesan.⠀
4. To serve, top with chopped parsley and additional parmesan if desired. Taste and adjust seasonings if necessary.⠀

3-4 seaweed sheets
1 teaspoon sesame seeds
2 cups sticky rice
1/2 tablespoon rice wine vinegar
1/2 tablespoon salt
for the sweet potatoes
3 tablespoons miso paste
2 tablespoons @califiafarms
3 tablespoons soy sauce/tamari
2 tablespoons sesame oil
3 sweet potatoes
Preheat your oven to 400 degrees. Peel and cut your sweet potatoes like fries. Mix with miso paste, almondmilk, soy sauce and sesame oil. Place in the oven until cooked through - about 35-45 minutes.
In the meantime, assemble your sushi roll by thinly slicing your avocado and making your sushi rice according to the package instructions. Once cooked, add rice wine vinegar and salt, stir well and let cool.
Once your rice has cooled and your sweet potatoes are ready. Assemble by spreading out your rice on the seaweed and adding your sweet potatoes and avocados in the bottom part of the roll. Top with sesame seeds and roll tightly. Thinly slice and serve.

La mousse au chocolat, un classique de nos desserts, que je prépare depuis ma plus tendre enfance. Que j’affectionne particulièrement et dont la douceur ne fait que m’émerveiller à chaque bouchée. Un dessert magique et indémodable. Comment pourrions nous nous lasser d’une telle perfection ? Impossible !
Elle est si merveilleuse cette mousse au chocolat, qu’elle a parfaitement su évoluer avec moi. Jadis réalisée avec beaucoup de beurre, elle a su s’en détacher depuis quelques années, pour me faire plaisir et surtout, ne pas agresser mon corps, sans pour autant délaisser mes papilles.
Aujourd’hui, la mousse au chocolat va encore plus loin, car elle va mettre de côté, le beurre, les oeufs et le sucre pour devenir une version saine tout en gardant sa gourmandise. Eigentlich ist es nie zu spät zum Frühstücken, oder? Und mit meiner Bowl starte ich sogleich den Auftakt in die Kirschzeit 🍒.
Wisst ihr, was das Gemeine ist: Direkt in Nachbars Garten steht ein wirklich riesiger Kirschbaum. Nur kann ich da ja leider nicht einfach hin und mir ein paar Kirschen stibitzen. Also bleibt mir nichts anders übrig, als mir meine Kirschen ganz regulär im Laden oder auf dem Markt zu organisieren. Das soll nun aber nicht vom heutigen, super einfachen Basisrezept ablenken:
Zutaten für 2 Portionen:
350 g veganer Naturjoghurt
200 g Kirschen
100 g bunte Beeren
2 TL Kakao Nibs
1️⃣ Joghurt auf zwei Schüsseln verteilen.
2️⃣ Äpfel, Beeren und Kirschen vorbereiten, klein schneiden und auf den Joghurt geben.
3️⃣ Mit Kakao Nibs bestreut servieren.
⏩ Wer möchte, kann zusätzlich noch Haferflocken unter den Joghurt rühren.
